2 Ripe Bananas (with spots)
1 1/3 C. Unsweetened Shredded Coconut

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicon liner.
  • Add bananas to a bowl and mash with a fork until smooth (no lumps). One of my tricks to getting things extra creamy and smooth is to use a handheld immersion blender (see recipe video).
  • Once banana is mashed and smooth, add the shredded coconut. Mix with a fork then use your hands to make sure the coconut is fully incorporated into the banana. **Add a pinch of sea salt (optional).
  • Separate mixture into 8 equal parts. Roll the mixture into a tight ball then flatten into a cookie shape (about 1/2 inch thick) and place onto the baking sheet. Repeat this process until you've formed 8 cookies.
  • Bake cookies for 20-25 minutes or until tops are golden. **It took mine exactly 22 minutes. Once done, transfer cookies to a cooling rack and let cool completely before serving. ENJOY!!

1 ¼ cups margarine
¾ cup firmly packed brown sugar
½ cup white sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
3 cups rolled oats
2 ripe bananas, sliced
1 ½ cups raisins
1 cup flaked coconut

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the margarine, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture until well blended. Stir in the oats, bananas, raisins and coconut, one at a time using a wooden spoon. Drop by rounded spoonfuls 2 inches apart onto the prepared cookie sheet.
  • Bake for 11 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.

1/2 cup shortening, room temperature
1/4 cup creamy cashew butter
1 cup sugar
1 cup mashed ripe banana (about 2 medium)
1 large egg, room temperature
1 tablespoon grated lime zest
1 teaspoon salt
1/2 teaspoon baking soda
1-3/4 cups unsweetened finely shredded coconut
1-1/2 cups all-purpose flour
1/2 cup sweetened flaked coconut

Steps:

  • Preheat oven to 375°. Cream shortening, cashew butter and sugar until light and fluffy, 5-7 minutes. Beat in next 5 ingredients until thoroughly mixed. In a separate bowl, mix unsweetened coconut and flour. Beat into creamed mixture just until combined., Using a medium cookie scoop, drop dough 2 in. apart onto parchment-lined baking sheets. Sprinkle with sweetened coconut. Bake until edges are golden brown, 15-20 minutes (cookies will have cakelike texture). Remove from pans to wire racks to cool. Serve warm or at room temperature.

This is my own creation. I took everything I liked and combined it into a bar that was simple to make. You can use your choice of cookie crumbs or chocolate chips and still end up with a good tasting cookie bar. With 5 growing boys in the house this treat does not last!!!!!! So go ahead, use your imagination, more coconut, less coconut,butterscotch chips - The choice is yours!!!!

3 cups chocolate cookie crumbs or 3 cups vanilla cookie crumbs
1/2 cup butter, softened
2 tablespoons sugar
1 cup chocolate chips or 1 cup vanilla chip
1 (14 ounce) can sweetened condensed milk
2 bananas, sliced (not overly ripe)
1/2-1 cup coconut
2 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • Preheat oven to 375° and grease 13 by 9" pan Mix cookie crumbs,butter and sugar until thoroughly blended& reserve 1/3 of mixture.
  • Press the remaining mixture into bottom of baking dish.
  • Bake for 8- 10 minutes until lightly browned.
  • Remove pan from oven and sprinkle cookie base with chocolate chips and return pan to oven until chocolate chips are shiny, spread evenly and set aside.
  • In medium saucepan combine condensed milk, banana, coconut and butter.
  • Cook over low heat, stirring constantly until thickened.
  • Remove from heat and stir in vanilla extract and salt.
  • Spread over cookie crumb base in pan.
  • Sprinkle reserved cookie crumb mixture over filling.
  • Return to oven for 8-10 minutes until topping is slightly browned.
  • Cool thoroughly and cut into bars.

Tips:

  • Use overripe bananas. Overripe bananas are sweeter and have a more intense flavor, which will make your cookies more delicious.
  • Mash the bananas well. The better you mash the bananas, the smoother your cookies will be.
