1/4 cup unsalted butter, melted
2 large eggs
1/2 cup quick-cooking oatmeal
1 1/2 cups mashed bananas (3-4 very ripe bananas)
1/4 cup buttermilk
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chocolate chips

Steps:

  • Combine sugar and butter in a large bowl and stir until uniform. Add eggs one at a time, and stir to incorporate. Add oats, banana, buttermilk and vanilla; stir until uniform.
  • Combine flour, baking soda and salt in a small bowl; stir with a fork to blend. Add flour mixture to banana mixture one third at a time; stir until just combined. Stir in chocolate chips.
  • Pour batter into prepared pan. Bake for 1 hour and 10 minutes or until loaf is dark brown and a cake tester comes out clean.
  • Cool bread in pan for 10 minutes, and then run a knife along edges to loosen, turn out of baking pan and cool on a rack. Makes one loaf.

  • Tip: If you're only going to purchase one kind of oatmeal, you should buy the old-fashioned or large-flake oatmeal. Time 30m

Yield 4 servings

Number Of Ingredients 11

2 cups plain almond milk
2 fully-ripened large bananas (1 1/2 diced and 1/2 thinly sliced crosswise)
1/4 teaspoon pure almond extract
1/4 teaspoon pure vanilla extract
Kosher salt
2 cups old-fashioned rolled oats
2 tablespoons unsweetened cocoa powder
2 tablespoons honey or agave nectar
1/3 cup toasted and chopped walnuts
Pinch ground cinnamon
2 tablespoons semisweet chocolate chips

Steps:

  • Bring the almond milk, 1 3/4 cups water, the diced bananas, almond and vanilla extracts and pinch of salt to a boil in a large saucepan over high heat.
  • Stir in the oats, cocoa powder and 1 tablespoon of the honey and reduce the heat to medium. Cook, stirring frequently, until the oats are fully cooked to desired consistency, 6 to 7 minutes.
  • Transfer to 4 bowls, top with the sliced bananas, walnuts, the remaining 1 tablespoon honey, cinnamon and chocolate chips and serve.

Tips:

  • For a richer flavor, use dark chocolate chips instead of semi-sweet chocolate chips.
  • If you don't have any ripe bananas, you can ripen them quickly by placing them in a paper bag with an apple for a few hours.
  • If you don't have any rolled oats, you can use quick oats instead. Just be sure to reduce the amount of liquid by 1/4 cup.
  • To make the bread even more moist, you can add 1/2 cup of mashed avocado to the batter.
  • If you want a more crunchy topping, you can sprinkle the bread with some chopped walnuts or pecans before baking.

Conclusion:

This banana chocolate oatmeal bread is a delicious and nutritious breakfast or snack. It's easy to make and can be customized to your liking. So next time you have some ripe bananas, give this recipe a try!
