3 bananas ((I love to use some of the bananas from my freezer for this!))
1 egg ((room temperature))
1 cup plain yogurt
1/2 cup honey
1 tbsp vanilla
1 and 1/2 cup flour
1/2 cup rolled oats
1 and 1/4 tsp baking soda
1 tsp salt
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Before you start, you might need to warm up your egg if it's cold from the fridge. Put it in a small bowl and cover with warm-hot water. Let it sit for a few minutes and repeat.
  • If you're using frozen bananas, defrost them and mash with a fork.
  • In a large bowl, combine bananas, egg, yogurt, honey and vanilla. Whisk well to mix.
  • In a medium-sized bowl, combine flour, oats, baking soda and salt. Mix well. Add to wet ingredients and use a large spatula to mix gently until *just* combined. If you overmix the batter the donuts will be tough.
  • Fold in chocolate chips.
  • Spray donut pan with non-stick spray and spoon batter into each donut well. I used around 2 tablespoons of batter for each donut. Don't overfill - they will rise.

  • Cool on a wire rack. These donuts freeze well.
