Time 1h25m

Yield 1-2 one large or two small loaves, 6-8 serving(s)

Number Of Ingredients 10

4 ounces butter, softened
1 1/4 cups flour
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup sugar
2 large ripe bananas, mashed
2 eggs, beaten
5 tablespoons boiling water
1 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 325°F Sift dry ingredients (not sugar) in medium bowl and set aside. Beat butter and sugar in separate larger bowl until they are light and fluffy. Beat in bananas then eggs. *I usually beat the bananas in a bowl until I need them, rinse it out, then beat the eggs in the same bowl so I have less dishes to wash.* Stir in flour mixture alternately with boiling water until just combined. Stir in chocolate chips. Bake for 1 hr 10 min or until risen and firm to touch. *Most of the times I've made it, it doesn't take the full hour to cook.* Let cool and turn out.

Categories     Cake     Chocolate     Dessert     Bake     Kid-Friendly     Quick & Easy

Yield 2 small loaves

Number Of Ingredients 11

1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened
2 eggs
4 tblsp. sour cream
2 ripe bananas, mashed
1 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
6-12 oz. chocolate chips (as desired)

Steps:

  • Preheat oven to 350. Butter and flour two small loaf pans. (approx. 8"x4") Cream together the sugar and butter. Add the eggs and beat well. Mix in the sour cream, bananas and vanilla. In a separate bowl, combine the flour, baking powder, baking soda and salt. Add the dry mixture to the wet mixture and mix well. Mix in the chocolate chips. Divide the batter between the pans and bake for about 50 minutes or until a toothpick comes out clean. Let the loaves cool in the pans for about 15 minutes and then turn them out onto a rack to cool completely.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Do not overmix the batter. Overmixing will result in a tough, dense loaf of bread. Mix just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches. A smaller pan will result in a loaf that is too thick and undercooked in the center.
  • Bake the bread at 350 degrees Fahrenheit for 50-60 minutes. Check the bread for doneness by inserting a toothpick into the center. If the toothpick comes out clean, the bread is done.
  • Let the bread cool completely before slicing and serving. This will help the bread to set and hold its shape.

Conclusion:

Banana chocolate chip loaf is a delicious and easy-to-make treat that is perfect for any occasion. With its moist texture, sweet banana flavor, and chocolatey chunks, this bread is sure to be a hit with everyone who tries it. So next time you have some ripe bananas on hand, be sure to give this recipe a try!
