What makes the perfect breakfast cookie? I've determined that people like a low-sugar cookie. They also really like oatmeal. As far chocolate? Less is more. These breakfast cookies are easy to make, assemble and serve-and are definitely not your average oatmeal-and-raisin cookies.

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.

  • 1. Chop your pecans (if necessary). Pre-heat the oven to 350 and toast pecans for 5-7 minutes.

2 1/2 cups All Purpose Flour
1 tsp Baking Soda
1 tsp Salt
1/2 cup Butter, softened
1/2 cup Peanut Butter
1/2 cup Mashed Banana
1/2 cup White Sugar
1/2 cup packed Brown Sugar
1/2 tsp Almond Extract OR 1 tsp Vanilla Extract
2 Eggs, room temp
2 cups Chocolate Chips
1 cup Chopped Walnuts

Steps:

  • Preheat oven to 350. In a large mixing bowl, cream butter and mashed banana on high until thoroughly mixed. Gradually add peanut butter, eggs (one at a time), almond extract and both kinds of sugar. Continue to beat on high until smooth. In a medium mixing bowl, combine flour, baking soda and salt. Add to wet ingredients slowly, 1/2 cup at a time, mixing all the while. Stir in chocolate chips and walnuts. Drop by heaped tablespoon fulls onto ungreased cookie sheets and bake 12-15 minutes until golden brown. Leave on cookie sheets about 2 minutes after removing from oven, then allow to cool completely on cooling rack.

1/2 c butter, softened
1 c sugar
1 egg, room temp
1 c smashed bananas- i use food processor
1 tsp baking soda
2 c flour
pinch salt
1/2 tsp each - ground nutmeg - ground cinnamon & ground cloves
1 c pecans, walnuts, chocolate chips or a combination - i used choc chips and pecans

Steps:

  • 1. Preheat the oven to 350 degree F. Line a baking sheet with parchment paper. Could just grease as well. Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy. Mix the mashed bananas and baking soda in a bowl and let sit for 2 minutes. Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix just until combined. Fold the pecans or chocolate chips if using, into the batter.
  • 2. Drop by tablespoonful onto either a parchment paper lined baking sheet, or greased. Bake for 11 to 13 minutes or until nicely golden brown.
  • 3. Let cool on wire racks.

3/4 c crisco
1 c sugar
1 egg
1 tsp vanilla
2 large ripe banana's or 1 cup ( mashed )
1 1/2 c all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp nutmeg
2 c quick oats
1 - 1 1/2 c chocolate chips - i use semi-sweet

Steps:

  • 1. Preheat oven to 375 degree F. Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
  • 2. Combine the flour, salt, baking soda, cinnamon and nutmeg.
  • 3. Add to creamed mixture and mix well. Stir in bananas, oats and chocolate chips.
  • 4. Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
  • 5. Remove immediately to wire racks to cool.
