So tasty and relatively good for you. I eat a square of it for breakfast with a little bit of yogurt and I feel spoiled!! Sometimes I use slightly less sugar (1/2 c)and it's still fabulous. Would also be good with a big scoop of vanilla ice cream.

1 1/4 cups quick oats
1 cup flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 large egg
1 cup over-ripe banana
1 cup shredded carrot
1/3 cup butter, melted
2 tablespoons peanut butter
1 teaspoon vanilla
1 tablespoon lemon juice
1/2 cup nuts (optional)

Steps:

  • Combine dry ingredients (and nuts if desired, I like sunflower seeds)in a large bowl.
  • Mix together until smooth: beaten egg, banana, carrot, melted butter, peanut butter, vanilla, and lemon juice.
  • Add this to the dry ingredients and stir just until moistened.
  • Pour into a greased 8x8-inch square pan.
  • Bake at 375°F for 45 minutes to 1 hour or until done.
  • NOTE: Depending on the oven you may want to try 350°F.

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs
1 cup mashed ripe bananas (2 to 3 medium)
1/3 cup canola oil
1 cup grated carrots
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar, baking soda, salt and cinnamon. In a small bowl, whisk the eggs, bananas and oil. Stir into dry ingredients just until moistened. Fold in carrots and pecans. Transfer to a greased 9x5-in. loaf pan. , Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk
½ teaspoon ground cinnamon
1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.

1/2 cup brown sugar, packed
3 very ripe large bananas, mashed
