Peels from 2 very ripe bananas, stem and very bottom discarded (see note)
1/2 cup unsalted butter, softened, plus more for buttering the pans
1 1/2 cups granulated sugar
2 large eggs, separated
1/2 cup buttermilk
1 2/3 cups cake flour, plus more (any type) for flouring the pans
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon fine-grain sea salt
1/2 cup unsalted butter
1 cup packed light or dark brown sugar
1/4 cup milk, 2 percent or higher
1 3/4 to 2 cups powdered sugar, sifted

Steps:

  • Heat the oven to 350 degrees F.
  • To make the cake: Cut the banana peels into 1-inch pieces and place them in a small saucepan with 1 cup of water. Bring to a boil over medium-high heat, then reduce the heat and simmer for 10 minutes. Stir in the brown sugar and cook, stirring constantly, for 2 minutes. Stir in the milk, raise the heat to medium-high and cook, stirring constantly until the mixture boils. Remove from the heat and let cool to lukewarm. Gradually whisk in 1 3/4 cups powdered sugar, beating until smooth. Add the additional 1/4 cup powdered sugar if the frosting is too loose. Use the frosting immediately, as it will begin to thicken and stiffen as it sits.
