3 very ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)

  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

Time P1DT5m

Yield 1 9x13 dish

Number Of Ingredients 14

3/4 cup butter
2 1/8 cups white sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons lemon juice
1 1/2 cups mashed bananas
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
3 1/2 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour a 9x13 inch pan.
  • In a small bowl, mix mashed bananas with lemon juice, set aside.
  • In a medium bowl, mix flour, baking soda and salt.
  • Set aside.
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in 2 teaspoons vanilla.
  • Beat in the flour mixture alternately with the buttermilk.
  • Stir in banana mixture.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
  • For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth.
  • Beat in 1 teaspoon vanilla.
  • Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth.
  • Spread on cooled cake.
  • You can add walnuts or pecans to the cake or sprinkle them on top of the frosting.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cake will be. Look for bananas with yellow skin that is covered in brown spots, indicating that they are very ripe.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter and produce a light and airy cake. Make sure that the butter is softened to room temperature, otherwise it will not cream properly.
  • Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Mash the bananas before adding them to the batter: This will help to ensure they are evenly distributed throughout the cake. You can mash them with a fork or with a potato masher.
  • Do not overmix the batter: Overmixing can result in a tough, dense cake. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help the cake to rise evenly.
  • Test the cake for doneness before removing it from the oven: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter attached, the cake needs to bake for a few minutes longer.

Conclusion:

Banana cake is a delicious and easy-to-make dessert that can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious treat that will be a hit with your family and friends. So next time you have some ripe bananas, be sure to give this recipe a try!
