½ cup shortening
1 cup packed brown sugar
2 eggs
1 cup mashed bananas
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cloves
½ cup chopped pecans
3 cups sifted confectioners' sugar
1 tablespoon butter, melted
¾ teaspoon vanilla extract
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream shortening; add brown sugar, beating well. Add eggs and banana; beat well.
  • Sift together flour, baking powder, baking soda, salt, and spices. Add to creamed mixture; mix well. Stir in pecans.
  • Drop dough by rounded tablespoonfuls, 2 inches apart onto greased cookies sheets. Bake for 12 minutes. Remove to wire racks to cool. Dip half of cooled cookies into Powdered Sugar Icing.
  • To Make Icing: Combine 3 cups confectioner's sugar, 1 tablespoon melted butter or margarine, and 3/4 teaspoon vanilla extract. Add milk to yield desired consistency (you may need to add a little extra), beating until smooth.

1 large egg
2 tablespoons vegetable oil
1/2 teaspoon ground nutmeg
1 (18.25-ounce) package yellow cake mix
1 cup chopped nuts, optional

Steps:

  • Oven to 350°F. Spray cookie sheets with nonstick cooking spray. In large bowl mash banana. Add egg, oil, nutmeg and half the dry cake mix to the bowl and beat on medium speed until well blended. Stir in remaining dry cake mix with wooden spoon just until combined and moistened. Stir in the chopped nuts if using. Drop by teaspoonfuls on cookie sheets, about 2 inches apart. Bake 10 to 13 minutes until the center is just barely set when lightly touched with your fingertip and edges are firm. Remove from the oven, allow cookies to cool for one minute then transfer to wire racks.

1/4 cup creamy peanut butter
1/2 cup packed brown sugar
1 egg
1 ripe medium banana, mashed
1/2 teaspoon vanilla
1 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Melted chocolate frosting, if desired
Chopped roasted peanuts, if desired

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, peanut butter and brown sugar with electric mixer on medium speed 2 minutes or until creamy. Beat in egg. On low speed, beat in banana and vanilla until smooth.
  • In small bowl, mix flour, baking powder, baking soda and salt. On low speed, beat flour mixture into peanut butter mixture.
  • Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 1 inch apart.
  • Bake 12 minutes or until golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Drizzle cookies with melted frosting and sprinkle with peanuts.
