Though our two children (now grown; we have one granddaughter) dislike bananas, they've always enjoyed this. It's been a standby since my grandmother shared the recipe before I was married. 3/4 cup milk
1/2 cup butter
1/2 cup sugar
5-1/4 to 6 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3 eggs
3 medium ripe bananas, mashed
1 teaspoon water

Steps:

  • In a large saucepan, cook and stir the milk, butter and sugar over medium heat until butter is melted; cool to 120°-130°. In a large bowl, combine 2 cups of flour, yeast, salt, 2 eggs, bananas and milk mixture; beat on low speed until combined. Beat on medium for 3 minutes. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes., Divide dough in half; shape each into a round loaf. Place on a greased baking sheet; cut slits in tops. Cover and let rise until doubled, about 45 minutes. , Beat remaining egg with water; brush over the loaves. Bake at 375° for 30-35 minutes or until golden brown.

I got this recipe sometime back from a Fleischmann's yeast package, and I have been making this bread ever since. If you enjoy working with yeast, then this is one that you should try, this bread is really good! Prep time includes rising time.

Number Of Ingredients 12

4 3/4 cups all-purpose flour, divided
3/4 cup sugar, divided
1 teaspoon salt
1 1/2 tablespoons dry yeast
1/3 cup evaporated milk, undiluted
1/3 cup water
1/3 cup margarine or 1/3 cup butter
2 eggs, room temperature
1 cup banana, mashed
1/2 cup chopped pecans
2 teaspoons cinnamon
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Set oven to 375 degrees.
  • Grease 2 (8-1/2 x 4-1/2-inch) loaf pans.
  • In a large bowl, mix together 1-1/4 cups flour, with 1/2 cup sugar, salt and undissolved yeast.
  • Heat the evaporated milk, water and margarine OR butter to 120F-130F (the margarine need NOT melt).
  • Add to dry ingredients; beat for 2 minutes at medium speed of mixer.
  • Add in eggs, banana and 1 cup of flour; beat at high speed for 2 minutes.
  • Stir in the chopped pecans, and enough remaining flour to make a stiff dough.
  • Knead for 8-10 minutes.
  • Set in a greased bowl; grease the top of dough lightly, cover bowl with plastic wrap; let rise until doubled in size (about 1 hour).
  • Punch down dough; divide in half; shape into loaves.
  • Place the dough into prepared baking loaf pans; cover, let rise until doubled, (about 1 hour).
  • In the meantime, mix the remaining sugar and cinnamon.
  • When the loaves are doubled in size, remove the plastic wrap, brush lightly with melted butter and top with the sugar mixture.
  • Bake for 25-35 minutes.
  • Cool.

2 packages (1/4 ounce each) active dry yeast
1/3 cup warm water (110° to 115°)
1 cup mashed ripe bananas (2 to 3 medium)
1/2 cup sugar
1/3 cup warm milk (110° to 115°)
1/3 cup butter, softened
1/2 teaspoon salt
2 eggs
5 to 5-1/2 cups all-purpose flour
1/2 cup chopped nuts

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the bananas, sugar, milk, butter, salt, eggs and 3 cups flour. Beat on medium speed for 3 minutes. Stir in nuts. Stir in enough remaining flour to form a stiff batter. Do not knead. , Spoon into two greased 9x5-in. loaf pans. 1/2 cup butter
1/2 cup sugar
5 - 6 cups all-purpose flour
2 packages active dry yeast (4 1/2 teaspoons)
1 teaspoon salt
2 large eggs + 1 large egg
3 bananas, mashed
1 teaspoon water

Steps:

  • In a small saucepan over medium heat add milk, butter and sugar. Cook until butter is melted and sugar is dissolved. F - 130Once milk mixture is at a temperature you are comfortable with pour mixture into your stand mixer. Add salt, 2 eggs & bananas. Mix well. Add yeast and 2 cups of flour. Mix for 3 minutes to allow the yeast to truly mix into the dough. Add in additional 3 cups of flour, 1/2 cup at a time, mixing well after each addition. Add UP TO 1 more cup of flour a little at a time until dough no longer sticks to the side of the mixing bowl while mixing. Continue mixing dough for 5 more minutes. You can hand knead here, however I prefer to let me mixer do the job for me! Butter or spray a large mixing bowl. Place dough inside bowl and turn once to coat entire dough with butter or oil. Cover with a cloth or plastic wrap and let rice in a draft free spot until double in size. This takes about 45 minutes. Prepare 2 baking sheets by place parchment paper, non-stick foil, a Silpat or greasing the pans. Scoop out half the dough and form into a round loaf. Place loaf onto prepared baking sheet. Cut decorative slits in the top - loaf WILL rise while baking and this will help it keep it's beautiful shape. Scoop out other half and do the same for your second baking sheet. Cover again, and let rise again. Should take another 45 minutes. In a small bowl beat 1 egg and 1 teaspoon of water together. Brush this mixture on top of each loaf. Bake at 375*F for 20 - 30 minutes. My oven only required 20 minutes, however mine bakes a bit hot. If you are unsure if dough is done it should have a nice golden color and sound hollow when you thump the bread with your finger.

1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
