1 ¼ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 (3 ounce) package non-instant vanilla pudding mix
⅔ cup white sugar
½ cup shortening
2 eggs
2 tablespoons milk
1 ⅓ cups mashed ripe banana
⅓ cup chopped walnuts

Steps:

  • In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.

2 cups mashed ripe bananas (4 to 5 medium)
1 cup canola oil

1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup packed brown sugar
2 eggs
2 cups mashed very ripe bananas (4 medium)
2 packages (3 oz each) cream cheese, softened
1/2 cup powdered sugar
2 1/4 cups half-and-half
1 1/2 teaspoons vanilla
Dash salt
3 eggs
Powdered sugar

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In medium bowl, stir together flour, baking soda, cinnamon and 1/4 teaspoon salt. Set aside.
  • In large bowl, beat butter and brown sugar with electric mixer on medium speed until well blended. Add 2 eggs, one at a time, beating well and scraping down side of bowl after each addition.   • In medium bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth and creamy. On low speed, beat in half-and-half. Add vanilla, salt and 3 eggs; beat until almost smooth. Pour Custard evenly over bread cubes in dish. Cubes should be completely soaked by Custard; if not, use spoon to press cubes down into Custard.
  • Bake 35 to 50 minutes or until Custard is set. Sprinkle top of bread pudding with powdered sugar. Cut into squares; serve warm.
