CHOCOLATE-CHIP BANANA BREAD

Chocolate-Chip Banana Bread image

This recipe uses four bananas, which is more than is typical for a single loaf. The natural sugars from the ripe, brown bananas keep the bread incredibly moist for up to one week, even sliced. The high moisture of the batter can make it tricky to determine doneness, so take care not to underbake the the loaf. It should have a dry, shiny, cracked surface, and a tester inserted into the thickest portion should come out with a few moist crumbs attached. Serve this banana bread for breakfast or brunch, or even as a simple dessert, topped with a scoop of coffee ice cream.

Time 2h

Yield One 9-inch loaf

Number Of Ingredients 13

Nonstick spray, as needed
4 very ripe medium bananas, peeled
6 tablespoons/85 grams unsalted butter, melted
1/3 cup/80 milliliters plain Greek yogurt
1 cup/220 grams light or dark brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon fine sea salt
1 cup/135 grams finely chopped chocolate or mini chocolate chips (see Tip)
3/4 cup/130 grams coarsely chopped toasted nuts, such as almonds, walnuts or pecans (optional)
Coarse sanding or turbinado sugar, as needed for finishing (optional)

Steps:

  • Heat the oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
  • In a large bowl, mash the bananas coarsely using a fork. They should be fully broken apart, but it's OK if some larger lumpy pieces remain. Whisk in the melted butter, yogurt, brown sugar, eggs and vanilla until well combined.
  • In a medium bowl, whisk the flour, baking soda and salt to combine. Add the flour mixture to the banana mixture and stir to combine using a silicone spatula or wooden spoon. Scrape the sides and base of the bowl well to make sure the mixture is uniformly combined.
  • Gently stir in the chocolate until combined, then pour the batter into the prepared loaf pan and spread into an even layer. If using, sprinkle the surface generously with coarse sugar.
  • Transfer the pan to the oven and bake until the edges of the loaf start to pull away from the edge of the pan, and a tester inserted into the center comes out with just a few moist crumbs attached, 60 to 75 minutes. If the top of the loaf is becoming too dark before it's baked through, loosely cover with foil.
  • Transfer from the oven to a cooling rack and run a thin knife around the edge of the banana bread to separate it from the pan. Let cool in the pan for 10 minutes before unmolding and cooling completely.

AMAZING BANANA BREAD WITH CHOCOLATE CHIPS AND WALNUTS

Amazing Banana Bread With Chocolate Chips and Walnuts image

I love banana bread and I have been tinkering with this recipe for a while now. It is a bit different but it comes out so moist. You can also substitute for any nut you like. I have used pecans and hazelnuts with great results. Also different kinds of puddings make for great changes. The last batch I made I used cheesecake flavored- OMG- sinful.

CHOCOLATE CHIP BANANA NUT BREAD

BANANA BREAD WITH CHOCOLATE CHIPS AND WALNUTS

Banana Bread with Chocolate Chips and Walnuts image

Categories     Bread     Chocolate     Bake     Banana     Walnut

Yield Makes 1 (9-inch) loaf

Number Of Ingredients 12

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup semisweet chocolate chips
3/4 cup walnuts, toasted and chopped
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup sugar
2 large eggs
1 cup mashed ripe bananas
2 tablespoons fresh lemon juice
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350°F. Butter and flour a 9 by 5-inch metal loaf pan. Whisk the flour, baking soda, baking powder, and salt in a medium bowl to blend. Combine the chocolate chips and walnuts in a small bowl; add 1 tablespoon of the flour mixture and toss to coat.
  • In a stand mixer, beat the butter in a large bowl until fluffy. Gradually add the sugar, beating until well blended. Beat in the eggs 1 at a time. Beat in the mashed bananas, lemon juice, and vanilla. Beat in flour mixture.
  • Spoon one-third of the batter into the prepared pan. Sprinkle with half of the chocolate-chip and nut mixture. Spoon another one-third of batter into the pan. Sprinkle with the remaining nut mixture. Cover with the remaining one-third batter. Run a knife through the batter in a zigzag pattern.
  • Bake the bread until a tester inserted into the center comes out clean, about 1 hour and 5 minutes. Turn out onto a rack and cool.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, making your banana bread light and airy.
  • Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Fold in the dry ingredients gradually: Overmixing the batter can result in a tough, dense banana bread.
  • Add the chocolate chips and walnuts last: This will help to prevent them from sinking to the bottom of the loaf.
  • Bake the banana bread at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean: Check the bread after 45 minutes and cover it with foil if it is starting to brown too quickly.
  • Let the banana bread cool completely before slicing and serving: This will help to prevent the bread from crumbling.

Conclusion:

This classic banana bread recipe with chocolate chips and walnuts is a delicious and easy-to-make treat. With its moist texture, sweet banana flavor, and crunchy chocolate chips and walnuts, this banana bread is sure to be a hit with everyone who tries it. So next time you have some ripe bananas on hand, give this recipe a try!
