1 box 'pillsbury' -sugar free yellow cake mix (16 0z.)
1/3 c canola oil
3 large eggs
3 TO 4 medium bananas, mashed (about 1 & 1/2 c.)
1/4 tsp nutmeg
1 tsp ground cinnamon
1/2 c chopped walnuts or pecans, finely chopped (optional)

Steps:

  • 1. PREP TIME: 10 MINUTES BAKE TIME: 45 TO 55 MINUTES MAKES: 2 (8X4-INCH) LOAVES OR 4 (MINI) LOAFS. PREHEAT OVEN TO 350 DEGREES F. GENEROUSLY SPRAY DESIRED SIZE LOAF PANS WITH 'BAKER'S JOY' NONSTICK COOKING SPRAY.

1 cup Splenda sugar substitute
2 cups flour
2 cups wheat flour
5 bananas
4 eggs
2 teaspoons baking soda

  • Put applesauce, eggs, and bananas in the mixing bowl and mix until well mixed.
  • Add soda, and flours, one cup at a time.
  • I placed them in 6 small loaf pans in order to be able to figure serving size.

1/2 cup whole wheat flour
1/2 cup all-purpose white flour
1/2 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup toasted pecans or 1 cup walnuts, chopped
2 cups bananas, mashed (very ripe)
1/4 cup plain yogurt
2 large eggs, beaten lightly
6 tablespoons canola oil
1 teaspoon vanilla (clear)

Steps:

  • For oat flour, rolled oats were powdered in food processor.
  • Preheat oven to 350 degrees. Grease the bottom only of loaf pan. Combine dry ingredients. In separate bowl, combine wet ingredients. Lightly fold wet ingredients into dry ingredients with spatula just until combined. Bake for about 55 minutes Cool for five minutes and invert. Store in refrigerator for four days or on the counter two days.
