1-1/2 cups granulated sugar
1 cup plain Greek yogurt ((or sour cream))
1/2 cup butter (softened)
2 large eggs
3-4 ripe bananas (mashed)
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
4 Tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla extract
1-2 Tablespoon milk

Steps:

  • Preheat oven to 375 degrees F and grease a 9x13 inch pan with non-stick cooking spray.
  • In a large bowl, cream together the sugar and butter. Beat in the sour cream and eggs, bananas and vanilla extract.
  • Add the flour, baking soda, salt, and mix just until moistened. Stir in walnuts, if using.
  • Spread batter evenly into prepared pan and bake for 23-28 minutes or until a toothpick inserted in the center comes out clean, or with few crumbs. Make frosting while the bars bake.

3 eggs
1 ½ cups mashed ripe bananas, (about 3-4 bananas)
1 teaspoon vanilla extract
2 cups all-purpose flour or gluten free all-purpose flour, ((I recommend using Cup 4 Cup gluten free flour))
1 teaspoon baking soda
1/4 teaspoon salt
½ cup (1 stick) unsalted butter
2 ½ cups powdered sugar
¼ teaspoon salt
3 tablespoons milk

Steps:

  • Preheat oven to 350°F. Grease a 15X10 jellyroll baking pan (see recipe notes for 9x13 pan).
  • In a large bowl, cream butter, sugar, and brown sugar until light and fluffy, about 3-5 minutes. Beat in the eggs, mashed bananas and vanilla until well combined. Add flour, baking soda and salt; mix into creamed mixture until just blended.
  • Pour batter into prepared baking pan. Bake 20-25 minutes, rotating pan 1/2 through baking. Bars are done when toothpick inserted in middle comes out clean.

4 cups confectioners' sugar

  • Note: I began making the frosting when the bars only had about 10 minutes left to bake. You do not want to let the frosting sit too long before spreading on the bars or it will make it very difficult to spread.
