8 medium apples, peeled and cubed
1 medium ripe banana, thinly sliced
1 cup raisins
3/4 cup orange juice
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup butter, melted
2 teaspoons pumpkin pie spice
1 small lemon
1 envelope instant apples and cinnamon oatmeal
1/2 cup boiling water
Dried banana chips, optional

Steps:

  • Place the apples, banana and raisins in a 3-qt. slow cooker coated with cooking spray. In a small bowl, combine the orange juice, brown sugar, honey, butter and pie spice; pour over apple mixture. Cut ends off lemon. Cut into 6 wedges and remove seeds. Transfer to slow cooker. 1 cup butter, softened
2 cups sugar
4 eggs, separated
3 cups all-purpose flour
2 teaspoons baking powder
1 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
FILLING:
2 cups sweetened applesauce
3 medium firm bananas, sliced
3 tablespoons lemon juice
FROSTING:
1 cup sugar
2 egg whites
3 tablespoons water
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Beat in extracts. Combine flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition., In a small bowl, beat egg whites until soft peaks form; gently fold into batter. When I googled for the recipe, I got two versions, the one below which is from vegweb.com, and a much simpler one, which, I confess, is the one I tried. For this version you peel a banana and mash it in a bowl with a fork or potato masher. (You can soften the banana in the microwave by heating it for 20 seconds, if needed.) Add a can of applesauce to the mashed banana. You can puree the mixture or simply mash it with the potato masher which will usually get the mixture smooth.
