2 teaspoons ground cinnamon
1 teaspoon baking soda

3 large very ripe bananas, mashed
2 apples, cubed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
  • In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. This recipe is now back to my original posting as I posted it at Recipezaar many years ago. Recently I noticed that somehow the name got changed as did some of the ingredients. In 2005 I wrote that this is a moist light bread/cake with just a hint of cinnamon. Keeep an eye on cooking times as too long and it will be drier. Also leave in tin for about 5 mins before turning out onto a rack to cool completely. Slices can be served as a dessert topped with custard and whipped cream, or cold and buttered.

NOTE: FOR MUFFINS WITH RAISIN BRAN CEREAL, USE 1 & 1/2 CUPS ALL-PURPOSE FLOUR ONLY.
1 Tbsp oil for muffins; 1/3 cup for bread recipe
1 small container applesauce for muffins.
1 egg for muffins; 2 eggs for bread.
1 c fat free milk for muffins; 1/4 cup milk for bread.
1 Tbsp baking powder for muffins; only 1 & 1/2 tsp. for bread.
1/3 c light brown sugar for muffins; 1/2 cup gran.sugar for bread.

1 cup half and half milk

Steps:

  • Step 1:Heat oven to 350 F.

2 ripe bananas mashed
1 large. fully ripe red delicous apple (or two medium) diced or chopped
1 c sugar
2 eggs beaten
1/2 c margarine softened
2 c self rising flour

1 tsp ground nutmeg powder

Steps:

  • 1. Grease and flour the bottom and 1/2 inch up the sides of a 9x5x3-inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of the flour mixture; set aside.
  • 2. In a medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared pan.

50 g whole wheat flour
1 teaspoon baking soda

  • Chop apples 15 seconds/speed 4.
  • Add lemon juice and spices to TM bowl. Cook 8 minutes/90 degrees/speed 2. Scrape down,.

  • Add flours and mix 30 seconds/speed 4. Scrape down.
