3/4 cup old-fashioned oats
1/2 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt

1 egg
1/3 cup milk
1 tablespoon vegetable oil
1/2 cup grated peeled tart apple
1/4 cup mashed ripe banana

Steps:

  • In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. 1½ cups large rolled oats
1 cup whole wheat flour, ( 60%. You can use all-purpose flour if you prefer)
3 tsp baking powder
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
2 eggs
4 tbsp vegetable oil
6 tbsp sugar
⅔ cup milk
1 cup mashed ripe banana
1 cup grated unpeeled apple, (approximately one large apple)

Steps:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

1 cup mashed ripe bananas (about 2 medium)
1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil

1 ½ cup all-purpose flour
1 cup old fashioned oats
½ cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 egg
¾ cup milk
1/3 cup vegetable oil
1 cup mashed bananas 3 medium sized bananas
½ cup grated granny smith apple peeled

Steps:

  • Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
  • In a large separate bowl, add in the remaining ingredients and mix to combine.
  • Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.

  • Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!
