- Heat olive oil in a large pot over high heat. Sprinkle 1 tablespoon salt over steak cubes; cook and stir meat in the hot oil with onion and garlic until meat is seared, about 5 minutes; reduce heat to medium; cook and stir until meat is browned, about 3 more minutes. Remove steak pieces and set aside.
- Stir tomato sauce and tomato paste into same pot; mix in okra, water, coriander, white pepper, and cumin. Bring to a boil; season with additional salt. Reduce heat to low and simmer until okra is tender, 30 to 45 minutes; return pieces of beef to the bamia. Simmer until flavors are blended, about 10 minutes; garnish with slices of jalapeno pepper.

Steps:
- Trim the baby okras and wash in cold water and then place in a colander to drain.
- In a large saucepan, heat the oil or butter and add in the meat and brown on all side.
- Add the crushed garlic and chopped onions to the meat and saute till brown.
- Add in the chopped tomatoes, stirring in till the tomatoes are all broken down and soft, for about 10-15 minutes.
- Add in all the spices and salt and give it a good mix.
- Add enough water to cover the meat (about 7-8 cups) and stir to combine well.
- Add in the trimmed okras and bring to boil.
- Cover the pan with a lid and reduce the heat to low and simmer for 2 hours, until the meat is tender (the sauce will thicken as it cooks).
- Lastly, pour in the lemon juice and add in the chopped coriander and carefully stir once or twice (careful not to mash the okras) and gently simmer for another 5 minutes.
- Remove from heat and serve with rice.

- Heat olive oil in a large saucepan over medium heat; cook and stir onion until translucent, about 7 minutes. Mix in lamb, salt, and black pepper; cook and stir until lamb is lightly browned, 5 to 10 more minutes.
- Stir in tomato sauce and water; season with salt and black pepper. Bring lamb mixture to a boil and reduce heat to low. Simmer lamb in sauce until very tender, at least 1 hour, adding more water as needed. Stir occasionally.
- Preheat oven to 350 degrees F (175 degrees C).

- Cut stalks from okra.
- Heat 3 tablespoons oil in a large saucepan.
- Add okra, saute 6 minutes.
- Drain sauteed okra on paper towels.
- Discard oil, wipe pan with paper towels.
- Heat 2 more tablespoons oil in saucepan.
- Add onion and tomatoes, saute until heated through.
- Add ground beef- cook, stirring occasionally until browned.
- Add stock- bring to a boil.
- Add garlic and salt.
- Simmer until most of liquid has evaporated.
- Preheat oven to 350F.
- Brush a large baking pan with oil.
- Stir yogurt, sour cream and white pepper into beef mixture.
- Spoon half of the beef mixture over bottom of oiled pan.
- Cover with okra, then with remaining beef mixture.
- Sprinkle with remaining tablespoon oil.
- Bake 50-60 minutes.
- Garnish with tomato and lemon slices.

Steps:
- Wash well handling gently.
- Trim stem end without cutting into pod.
- Trim around top of stem attached to pod, removing a thin layer.
- Remove fuzz under running water by rubbing pod gently with a nylon scourer. If okra is young there is no need to do this.
- Spread out and leave until dry.
- Place in a bowl and pour on vinigar tossing gently so that vinegar coats okra.
- Leave for 30 minutes.
- Drain and rinse well.
- Dry and use as directed in recipes.
- TO FREEZE.
- Method 1.

- In a deep pan heat oil and fry okra for 5 miutes, tossing gently with a wooden spoon.
- Cool and put into freezer bags, expel air, seal and label. Pack into freezer.

- Have a bowl of ice water ready.
- Place prepared okra into a frying basket and lower into boiling water.
- Boil for 3 miutes, timed from when the water returns to a boil.
- Lift out and place in ice water for 3 minutes.
- Drain well, put into freezer bags, expel air, seal and label. Pack into freezer.

- Rub meat with ibzaar mixture.
- Heat oil in a medium sized saucepan or pot. Add meat with spices. Add some salt to meat. Fry until brown.
- Heat oil in seperate sautee/frying pan. Add tomatoes, onions, okra and garlic. Fry until onions are soft and slightly golden and until okra starts to slightly change color. It is best to add the garlic at the end of the frying process as garlic burns easily.
- Add above mixture to meat.
- Add water (make sure that meat is completely covered by at least 1 inch).
- Add tomato paste, lemon (or dried limes) and salt to taste.
- Bring to boil. Cover pot and reduce heat to medium for around 45 min and then low for maybe 10 to 15 minute
- Serve with Basmati rice.

- Sprinkle lamb cubes with pepper. Cover with cold water and bring to boil. Boil 15 to 20 minutes. Drain and rinse lamb in cold water.
- Return to pot with onion. Sprinkle turmeric over lamb and add a few dashes of pepper. Pour in 3 cups cold water. Cover partially and cook over medium heat about one hour, until lamb is cooked about half way.
- Add celery stalks and cook another 45 minutes to one hour, adding additional water, if necessary, to cover three-quarters of the meat.
- Add okra and tomato paste. When mixture begins to boil add lemon juice and season with salt. Add additional water, if necessary. Cook 15 minutes longer.
- Stir in parsley, celery leaves and mint; simmer partially covered for 15 minutes longer.
