1/4 cup clarified butter
2 tablespoons unsalted butter
confectioners' sugar

6 ounces cream cheese, softened
6 tablespoons peach jam
8 large eggs
1 cup whole milk
1 cup half-and-half

For an appetizing, lacy brown crust, sprinkle on sugar toward the end of cooking: It will caramelize and turn glossy. Just make sure to keep the heat low after you add the sugar. 2 egg yolks
