2 large zucchinis (unpeeled (about 1 lb.))
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
½ teaspoon Diamond Crystal kosher salt
¼ teaspoon black pepper
½ teaspoon garlic powder

Steps:

  • Preheat grill, or a grill pan, over medium-high heat. I like to use my George Foreman Grill.
  • Trim the zucchini edges and slice it crosswise into ½-inch-thick rounds.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, kosher salt, black pepper and garlic powder.
  • Brush the zucchini rounds with the mixture, on both sides. Set aside any remaining marinade.
  • Grill the zucchini slices until just tender, 3-4 minutes on each side. In my dual contact George Foreman grill, I grill 3 minutes on the first side, then 2 more minutes on the second side.
  • Brush the grilled zucchini slices with the remaining marinade and serve.

2 medium zucchini (about 8 oz each, sliced 1/4 inch thick)
1 tbsp olive oil (extra virgin)
1 tbsp red wine vinegar
1 tsp dried parsley
1 tsp dried basil
1/2 tsp garlic powder
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat grill on medium-high. In a large bowl, toss zucchini with oil, red wine vinegar, parsley, basil, and garlic powder. Season with 1/4 teaspoon salt and black pepper, to taste.
  • Once grill is hot, carefully use tongs to rub an oiled paper towel over grates to clean.
  • Using tongs, place zucchini on grill. Cover and cook, 2 to 3 minutes. Flip and continue cooking on high, covered, 2 to 3 minutes more

4 medium zucchini (about 8 ounces each)
1 tablespoon extra virgin olive oil
1 teaspoon Italian seasoning (optional)
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Juice of 1/2 small lemon
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat a gas or charcoal grill to high heat (400 to 450 degrees F). Trim off the ends of each zucchini and cut it lengthwise into quarters so that you have four batons per zucchini. Place on a rimmed baking sheet or on a large baking pan.
  • Drizzle the zucchini with olive oil and sprinkle with Italian seasoning (if using), salt, and pepper.
  • Place the zucchini on the grill so that one of the cut sides is touching the grates. Grill for 4 minutes, until clear grill marks appear.
  • Flip the zucchini over onto the back (peel) side. Grill for 5 additional minutes. At this point, you can flip it to the remaining ungrilled cut side for 1 to 2 minutes if you'd like grill marks on all surfaces (we usually just serve it as is!). Transfer back to the baking sheet or to a serving platter.
  • Squeeze the lemon over the top and sprinkle with Parmesan. Enjoy!

⅓ cup warm chicken broth
¼ cup balsamic vinegar
3 cloves garlic, finely minced, or more to taste
