1 tablespoon butter
1 tablespoon olive oil
1 cup chicken broth
¼ cup good quality balsamic vinegar

2 garlic cloves, chopped
3 tablespoons balsamic vinegar (eyeball it)
1/2 cup chicken stock or broth
1 lemon
1 pear, your favorite variety, quartered, cored, and thinly sliced
1 sack of baby spinach (about 6 cups)
1/4 pound crumbled Gorgonzola cheese, or Maytag Blue
2 tablespoons cold butter
