10 fresh figs, stemmed and quartered
1 ½ cups chicken broth
¼ cup balsamic vinegar

Steps:

  • Pat chicken thighs dry and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs and cook, 3 to 4 minutes on each side. Add figs, chicken broth, balsamic vinegar, and shallot. 1/4 cup chopped shallot
1/4 cup balsamic vinegar

1/4 cup good quality soy sauce
3 tablespoons balsamic vinegar
2 tablespoons sugar
2 garlic cloves, crushed
1/4 teaspoon salt

6 -8 chicken thighs

Steps:

  • Mix together the soy sauce, balsamic vinegar, sugar, garlic, salt and pepper until the sugar is dissolved.
  • Put cleaned and dry chicken thighs in a large sealable plastic bag, add the soy mixture, force out excess air and leave to marinate for up to 24 hours.
  • Preheat oven to 425F Transfer chicken and marinade to a large shallow baking pan (do not crowd chicken) then roast in middle of oven turning twice until chicken is cooked through for about 35-40 minutes.
  • Arrange chicken on serving dish.
  • Skim fat from the pan juices, place baking dish across 2 burners on top of stove add 1/3 cup water and deglaze over mod high heat stirring and scraping up brown bits, do this till reduced to about 1/4 cup.
  • (approx 2 minutes) Spoon sauce over chicken.
  • * As you can see a few have found this too salty for their taste.I suggest you use a salt reduced soy sauce if your tastes prefer a less salty dish.

2 pounds boneless and skinless chicken thighs (approximately 8 medium size thighs)

1 teaspoon granulated garlic
1 tablespoon oil
2 large carrots, cut in 1/4" slices on the diagonal
1/2 medium size sweet yellow onion
1/2 cup balsamic vinegar
4 tablespoons chipotle sauce
2 tablespoons tomato sauce
2 - 1/2 cups water, divided
2 cups half and half
1 tablespoon chicken bouillon granules
1 - 14.75 ounce can cream style corn
1 cup white cornmeal
2 teaspoons granulated sugar
1 tablespoon butter
1/2 cup sour cream
2 medium size avocadoes, peeled, seeded and mashed
1/2 teaspoon freshly squeezed lime juice
4 tablespoons grated Parmesan cheese
2 tablespoons of chopped cilantro

  • Preheat oven to 400 degrees. Place diced bacon into large frying pan over medium high heat. Fry bacon until browned. Remove bacon with a slotted spoon; set aside. Reserve drippings. Place chicken on a cutting board. Trim fat; cut each into 6 pieces. Place chicken in a large bowl and sprinkle with pepper, salt, thyme, garlic and oil; toss to coat. Place chicken into hot pan with the drippings. Fry over medium high heat for 10-12 minutes, browning all sides. Transfer chicken to a non-stick baking dish. In the same frying pan, sauté carrots until tender crisp. Add onions and sauté until slightly wilted. Transfer to the baking dish. Combine vinegar, chipotle sauce, tomato sauce and 1/4 cup of the water in a bowl. Pour mixture over contents of the baking dish and stir. Place into preheated oven. Cover and bake for 30 minutes, stirring two or three times. Remove from the oven, stir in the remaining 1/4 cup water if mixture seems dry and rest for 5 minutes. While the chicken is cooking, place 2 cups of water, half and half, cream style corn and chicken bouillon in a large saucepan. Bring to a gentle boil, and add cornmeal in a steady stream, whisking briskly. Reduce heat to medium low, add butter and stir frequently while cooking for the next 5 minutes; cover with a splatter screen if needed. Just before serving, stir in sour cream. 2 lbs. boneless, skinless chicken thighs
1/4 tsp. organic sea salt
1/4 tsp. freshly ground black pepper
2 Tbsp. extra virgin olive oil
3/4 cup balsamic vinegar
1 tsp. minced fresh thyme
1 bay leaf
1/2 cp chicken stock
2 Tbsp. honey

Steps:

  • Season thighs with salt and pepper. Heat a large skillet over medium high heat. When hot, swirl with olive oil and brown thighs on all sides. Remove chicken to a plate and sauté onions until deeply bronzed. Deglaze pan with 1/4 cup balsamic vinegar. Stir in minced thyme, ground pepper, bay leaf, remaining 1/2 cup balsamic vinegar, chicken stock and honey. Bring to a boil and add thighs back to pan. Reduce heat to low, cover and simmer vigorously for 20-30 minutes, turning several times, until chicken is cooked through and sauce has concentrated. Serve over rice.

2 Tbsp olive oil
4 large boneless skinless chicken thighs
salt and pepper
2 tsp poultry seasoning
3 clove garlic minced
2 sprig(s) rosemary minced
1/3 c orange marmalade
1/2 c chicken stock
1/3 c balsamic vinegar
2 green onions finely chopped
2 c baby arugula

Steps:

  • 1. In a large skillet over med high heat add the oil. Season the chicken with salt, pepper and poultry seasoning. Place in hot oil and cook until browned on both sides.
  • 2. Throw in the rosemary and garlic. Mix the marmalade, balsamic vinegar, and chicken stock and pour over the chicken
  • 3. Continue to cook over med low heat until chicken is no longer pink inside and the sauce has reduced to a sticky glaze. Add the green onions at the last minute.
  • 4. Place the chicken on a plate top with arugula and dress the arugula with any left over sauce in the pan.

4 boneless skinless chicken thighs $2.40

Steps:

  • 1. Mince the garlic and combine it in a bowl with the olive oil, balsamic vinegar, brown sugar, soy sauce, and a healthy dose of freshly cracked pepper (about 20 cranks of a pepper mill). 2. Place the chicken thighs in a shallow dish or heavy duty zip top bag and pour the marinade over top. Marinate the chicken in the refrigerator for 1 to 8 hours. (You can do this before you leave for work in the morning.) 3. Preheat the oven to 375 degrees. Pour the chicken and marinade into a baking dish. Place the chicken in the oven and bake for 45 minutes. Use a spoon or baster to bathe the chicken with the juices from the bottom of the dish once or twice during baking. 4. Remove the chicken from the oven after 45 minutes and sprinkle a handful of freshly chopped parsley over top. Notes This marinade would be enough to flavor six boneless, skinless chicken thighs, if needed.
