So easy and so good. I use frozen chicken breasts and cook on high for 4 hours in the slow cooker. The sauce is not thick, it is a bit runny, but very tasty. Add tomato paste if you want it thicker. Serve on top of pasta and sprinkle with Parmesan cheese. I use one can of crushed tomatoes and one can of diced tomatoes.

2 tablespoons olive oil
4 skinless, boneless chicken breast halves, or more to taste

2 lbs chicken thighs, with skin on
1 cup light brown sugar
1/4 cup Coke or 1/4 cup Sprite
2 tablespoons fresh crushed garlic
2/3 cup vinegar (mix balsamic & red wine vinegar equally to make 2/3 cup)
black pepper
2 tablespoons light soy sauce
white rice or pasta

Steps:

  • Put the first 7 ingredients in a crock pot and cook for 4-5 hours on LOW.
  • Cook the rice or pasta separately.
  • When chicken is done, remove the bones and skin and throw them away.
  • Put either rice or pasta in a bowl and then ladle the Balsamic Chicken on top with some of the liquid from the crock pot.

1 teaspoon dried basil
