APPLE BALSAMIC CHICKEN
I just love the sweet and tart flavor that balsamic vinegar gives to this dish. It's easy to prepare and after cooking in the slow cooker, the chicken thighs are tender and flavorful. -Juli Snaer, Enid, Oklahoma

BALSAMIC CHICKEN AND APPLE SKEWERS RECIPE - (4.5/5)

Steps:
- Measure vinegar, brown sugar, orange juice, garlic, olive oil, salt and pepper into a large zip-top bag. Seal and shake to combine. Cut chicken breasts into 1 1/2 inch cubes and add to the bag, seal and refrigerate for 1 hour or up to one day. Soak bamboo skewers in water for 30 minutes. Remove chicken from the marinade, and place the marinade, minus the garlic, in a small saucepan. Heat the marinade to boiling and boil until slightly thickened and reduced by half, about 5-7 minutes. Reserve. Skewer the chicken, along with the apples and onions and sprinkle with salt and pepper. Heat a grill pan (or your broiler) to medium high. Drizzle pan with a little oil to keep the skewers from sticking. Place the skewers on the pan and grill for 4 minutes. Turn them a quarter of the way around and grill another 4 minutes. Finish grilling the remaining two sides for 4 minutes each, grilling the skewers for a total of 16 minutes. If using your broiler, broil for about 10 minutes total, flipping once. Serve over rice and drizzle with reduced marinade.
Tips:
- Use a variety of vegetables for skewers, such as zucchini, cherry tomatoes, and bell peppers. This will add color and flavor to the dish.
- If you are using wooden skewers, soak them in water for at least 30 minutes before grilling. This will help to prevent them from burning.
- Cook the skewers over medium heat until the chicken is cooked through and the vegetables are tender. This usually takes about 10-15 minutes.
- Serve the skewers with a variety of dipping sauces, such as balsamic vinaigrette, tzatziki sauce, or ranch dressing.
- For a healthier option, use lean protein such as chicken or tofu instead of beef or pork.
- Feel free to experiment with different flavors by adding herbs and spices to the marinade.
- If you don't have skewers, you can also cook the chicken and vegetables in a grill pan or on a baking sheet.
Conclusion:
Balsamic Chicken and Apple Skewers are a delicious and easy-to-make dish that is perfect for a summer cookout or party. The chicken is tender and juicy, the apples are sweet and tart, and the balsamic glaze adds a wonderful flavor. This dish is sure to be a hit with everyone who tries it. Serve it with your favorite dipping sauce and enjoy!
