Tips:

  • Choose the right butternut squash: Look for a squash that is firm and heavy for its size, with a deep orange color. Avoid squash that has any soft spots or bruises.
  • Cut the squash in half lengthwise: This will make it easier to scoop out the seeds and roast the squash.
  • Scoop out the seeds: Use a spoon to scoop out the seeds from the center of the squash.
  • Drizzle with olive oil and season with salt and pepper: This will help the squash to roast evenly and develop a delicious flavor.
  • Roast the squash at a high temperature: This will help to caramelize the natural sugars in the squash and give it a slightly crispy texture.
  • Add the kale to the squash during the last few minutes of roasting: This will help to wilt the kale and make it tender.
  • Drizzle with balsamic glaze: This will add a sweet and tangy flavor to the squash and kale.
  • Serve immediately: This dish is best served warm, so enjoy it right away!

Conclusion:

This balsamic butternut squash with kale is a delicious and healthy side dish that is perfect for any occasion.
