  • In a microwave, melt white candy coating at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in peanut butter until smooth. 1/2 cup (1 stick) unsalted butter, softened

3 tablespoons low-fat buttermilk
1/2 teaspoon pure vanilla extract
2 large eggs, plus 1 large egg yolk
Snowball Frosting
Fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 325 degrees. Line 14 cups of 2 standard (12-cup) muffin tins with foil liners. Melt chocolate in a heatproof bowl set over a pan of simmering water, stirring. Let cool completely. Sift flour, baking powder, and salt into a bowl; set aside.
  • Put butter and sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, 3 to 5 minutes. Reduce speed to low.
