Number Of Ingredients 13

4 cups shredded unpeeled zucchini
½ teaspoon salt
2 eggs, lightly beaten
½ cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 cup shredded Monterey Jack cheese
1 pound ground beef
½ cup chopped onion
1 (15 ounce) can Italian-style tomato sauce
1 teaspoon Italian seasoning
1 green bell pepper, chopped
½ cup sliced fresh mushrooms
½ cup sliced black olives

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Place the zucchini in a colander and sprinkle with salt; let drain for 15 minutes then squeeze out the moisture.
  • Combine the zucchini, eggs, Parmesan, 1 cup mozzarella, and 1/2 cup Monterey Jack in a large bowl. Press the mixture into a greased 9x13 inch baking dish. Bake, uncovered, in the preheated oven for 20 minutes.

Time 45m

Yield 8

Number Of Ingredients 11

1 (8 ounce) container small mozzarella balls
4 medium Roma tomatoes
3 tablespoons olive oil, divided
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 large egg
1 tablespoon water
½ cup Panko, bread crumbs
2 medium zucchini, cut into 1/2-inch slices
1 (6 ounce) package sliced pepperoni

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with foil. Slice mozzarella balls in half; set aside.
  • Bring a small pot of water to a boil. Rinse tomatoes and put in the boiling water for blanching. Remove after 1 minute, let cool slightly, and use your hands to peel the skin; it should slip off easily.
  • Heat 1 tablespoon olive oil in another small pot. Add garlic and saute until fragrant, 1 to 2 minutes. Add peeled tomatoes, basil, and oregano. Cook tomatoes, breaking up with a spoon, to create a sauce. Let cook while you prepare zucchini.
  • Whisk egg and water together in a small bowl until mixture is consistent. Put panko in a shallow bowl.
  • Dip zucchini pieces into the egg-water mixture, then coat both sides with panko.
  • Heat remaining olive oil in a large skillet over medium heat. Add panko-coated zucchini slices and saute until golden brown, flipping occasionally, about 5 minutes. Transfer to the prepared cookie sheet.
  • Top each zucchini slice with about 1 teaspoon sauce and 1 pepperoni slice. Place 1 piece mozzarella on top of each zucchini.
  • Bake in the preheated oven until mozzarella is slightly melted, about 10 minutes. Serve immediately.

BAKED ZUCCHINI PIZZA BITES

Baked Zucchini Pizza Bites image

My Grammie used to make this with her fried zucchini and would place the sauce and cheese over the top and heat it in the oven till the cheese melted. It was so yummy! Well, I was getting ready to fry up the zucchini tonight and was thinking about how I could make it healthier without frying. I had made parmesan crisps before...

Time 45m

Number Of Ingredients 9

4 - 6 medium zucchini and/or squash
2 jar(s) new york style pizza sauce (14 oz.)
1 pkg provolone & mozzarella shredded blend (the best)
2 c panko bread crumbs (plain or italian) approx.
1/2 c parmesan cheese
salt and pepper to your taste
2 - 3 medium eggs
this is approx. on amts as i did not measure anything. :-)
pam to spary your baking dish

Steps:

  • 1. Wash and slice your zucchini. I sliced mine a little thicker for a "meatier" bite. Place your eggs into a bowl and whisk them. In another bowl your bread crumbs, Parmesan cheese, salt and pepper. Dip your zucchini into the egg and then bread mixture. Pat the bread onto the zucchini and have a nice thick breading on them. Place in another bowl. When finished place in a GREASED 9 by 14 pan.
  • 2. Bake at 400 degrees for 12 to 15 minutes till nice and crispy brown on top. No need to turn them. Remove from oven.
  • 3. Water down your pizza sauce slightly so that it will pour easily over the zucchini.
  • 4. Then place your cheese on top. Top with a little more breadcrumbs if you like. A little Parmesan cheese over top is fine too.
  • 5. Place back in oven for 7 to 10 minutes till it has a little brown crust on top.
  • 6. Remove from oven and let sit for 10 minutes. Prepare some garlic toast to service with it.
  • 7. Plate your pizza zucchini bites and your ready to eat.
  • 8. Made this for dinner 8/12/2014 --- If serving for guests you could warm additional pizza sauce on stove and pour some onto the plate and then place your zucchini over that. Just an added touch for presentation.
  • 9. If you have leftovers, these are just served up for lunch or dinner. Heat a little oil in your skillet. Then, place your pizza zucchini in and cover with lid. Cook it for about 5 minutes and the bottom becomes all crunchy with the bread crumbs and cheese.

Tips:

  • Use a sharp knife to cut the zucchini into thin slices. This will help them cook evenly.
  • If you don't have a pizza pan, you can use a baking sheet instead. Just make sure to grease it well so the zucchini slices don't stick.
  • Be careful not to overcrowd the pan when baking the zucchini slices. Leave a little space between each slice so they can cook evenly.
  • If you want your zucchini pizza bites to be extra crispy, bake them for a few minutes longer, or until the edges are slightly browned.
  • For a fun twist, try using different toppings on your zucchini pizza bites. Some popular options include pepperoni, sausage, bell peppers, and onions.

Conclusion:

Baked zucchini pizza bites are a delicious and healthy appetizer or snack that can be enjoyed by people of all ages. They're easy to make and can be customized to your liking. So next time you're looking for a quick and easy recipe, give these zucchini pizza bites a try!
