- Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with foil. Slice mozzarella balls in half; set aside.
- Bring a small pot of water to a boil. Rinse tomatoes and put in the boiling water for blanching. Remove after 1 minute, let cool slightly, and use your hands to peel the skin; it should slip off easily.
- Heat 1 tablespoon olive oil in another small pot. Add garlic and saute until fragrant, 1 to 2 minutes. Add peeled tomatoes, basil, and oregano. Cook tomatoes, breaking up with a spoon, to create a sauce. Let cook while you prepare zucchini.

Well, I was getting ready to fry up the zucchini tonight and was thinking about how I could make it healthier without frying. I had made parmesan crisps before...

- 1. Wash and slice your zucchini. I sliced mine a little thicker for a "meatier" bite. Place your eggs into a bowl and whisk them. In another bowl your bread crumbs, Parmesan cheese, salt and pepper. Dip your zucchini into the egg and then bread mixture. Pat the bread onto the zucchini and have a nice thick breading on them. Place in another bowl. When finished place in a GREASED 9 by 14 pan.
- 2. Bake at 400 degrees for 12 to 15 minutes till nice and crispy brown on top. No need to turn them. Remove from oven.
- 3. Water down your pizza sauce slightly so that it will pour easily over the zucchini.
- 4. Then place your cheese on top. Top with a little more breadcrumbs if you like. A little Parmesan cheese over top is fine too.
- 5. Place back in oven for 7 to 10 minutes till it has a little brown crust on top.
- 6. Remove from oven and let sit for 10 minutes. Prepare some garlic toast to service with it.
- 7. Plate your pizza zucchini bites and your ready to eat.
- 8. Made this for dinner 8/12/2014 --- If serving for guests you could warm additional pizza sauce on stove and pour some onto the plate and then place your zucchini over that. Just an added touch for presentation.
- 9. If you have leftovers, these are just served up for lunch or dinner. Heat a little oil in your skillet. Then, place your pizza zucchini in and cover with lid. Cook it for about 5 minutes and the bottom becomes all crunchy with the bread crumbs and cheese.
