  • Preheat oven to 200 degrees Fahrenheit. Use convection bake setting if your oven allows.

Steps:

  • Preheat oven to 425 degrees. Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper.   • 1. Preheat oven to 225^. Line a jelly roll pan with parchment paper and spray with canola oil. Set aside.
  • 2. Slice zucchini into thin medallions, about the thickness of a quarter. Lay slices on prepared paper lined and sprayed pan. Spray tops with oil. Sprinkle with seasoning of choice, not too much as vegetables shrink and too much gets concentrated on the veggie.
