Categories     Appetizer     Snack

Time 30m

Number Of Ingredients 10

2 cups grated zucchini (from ~1 zucchini)
1/2 cup bread crumbs (sub gluten free if needed)
1/4 cup grated parmesan cheese
2 eggs (beaten)
2 cloves garlic (minced or pressed)
2 tbsp chopped fresh basil (or 2 tsp dried)
1 tbsp chopped fresh parsley (or 1 tsp dried)
1/2 tsp salt
Freshly ground black pepper (to taste)
Marinara sauce (for dipping)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the grated zucchini in between two paper towels and squeeze out the excess water. You may want to repeat this step a second time to get out as much water as possible.
  • Add the grated zucchini to a mixing bowl with the bread crumbs, parmesan, and beaten eggs. Mix until it comes together, then stir in the garlic, basil, parsley, salt, and pepper. Scoop out ~2 tablespoons of the batter and roll it into a ball. Repeat until you have 12 balls. Place them in even layers on the lined baking sheet.
  • Bake for 15 to 20 minutes until the balls are golden brown. Serve warm with marinara sauce for dipping. Enjoy!

BAKED ZUCCHINI FRITTERS

Baked Zucchini Fritters image

Cheesy baked zucchini fritters are delicious fresh out of the oven or served cold with your favourite dipping sauce.

Categories     Appetizer

Time 39m

Number Of Ingredients 10

1 tbsp olive oil
1 medium zucchini (unpeeled, about 12")
1/2 tsp salt
2 large eggs (beaten)
1 cup Parmesan cheese (freshly grated)
2 garlic cloves (minced)
1/2 small onion (finely diced)
2 tbsp fresh basil (chopped)
1/4 tsp black pepper
1/2 cup chickpea flour

Steps:

  • Preheat oven to 400°
  • Line a 16" x 12" baking pan with parchment, and brush or spray the parchment with olive oil
  • Using a food processor or a box grater, shred zucchini and sprinkle it with salt.
  • Put the grated zucchini in batches in the center of a couple of layers of cheesecloth, or use a clean kitchen towel. Form a "bag" around the zucchini and really squeeze as much water as you can from it. You want the zucchini to be as dry as possible. Let the zucchini sit in a strainer while you prepare the rest of the ingredients. When as much moisture as possible is removed, you should have about 2 cups of zucchini, but a little more or less will be fine.
  • In a large bowl combine eggs, Parmesan, garlic, onion, basil and pepper
  • After giving the grated zucchini one more squeeze, in batches, add it to the Parmesan mixture and stir well to combine.
  • Stir in the chickpea flour, combining thoroughly
  • Form the batter into 12 balls (each ball will be a little less than 1/4 cup)
  • Put the balls, evenly spaced, on the prepared baking sheet and flatten with the back of a spoon to form patties
  • Bake in the center of the oven for 12minutes
  • Flip the patties and bake 12 more minutes
  • Garnish with parsley and serve hot or allow to cool and refrigerate.

ZUCCHINI BALLS

These can be served for dinner, in place of meatballs, with pasta and marinara (meatless tomato) sauce which is the way I usually serve them. They can also be served as an appetizer, with sauce on the side for dipping.

Categories     Cheese

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 9

3 tablespoons olive oil
1 medium onion, grated
4 -6 small zucchini, grated
3 tablespoons parmesan cheese
1 cup breadcrumbs
2 eggs, plus
2 egg whites
fresh ground pepper, to taste
16 -20 ounces marinara sauce

Steps:

  • Preheat oven to 350°F.
  • Lightly grease a cookie sheet.
  • Mix all ingredients together in a medium sized bowl.
  • Form mixture into small balls (about 1 rounded tablespoon each).
  • Place on cookie sheet and flatten slightly, bake for 15 minutes on each side at 350°F.
  • Add balls to a marinara sauce and simmer, covered, for 30 minutes.
  • Check during simmering to see if more sauce needs to be added.
  • Serve with pasta and sauce.
  • **NOTE: If you are going to substitute large zucchini for the small ones called for in the recipe, you should squeeze the grated zucchini dry before adding the rest of the ingredients. Large zucchinis contain much more water than small ones, and may cause the mixture to be too wet to hold together.

Tips:

  • Zucchini Preparation: Use young and firm zucchini for better texture and flavor.
  • Grating Technique: To get consistent zucchini shreds, use a box grater's large holes.
  • Squeezing Excess Moisture: Wring the grated zucchini in a cheesecloth or kitchen towel to remove excess moisture, ensuring a firm ball consistency.
  • Cheese Options: Parmesan or Asiago cheese are excellent options for a savory flavor, while mozzarella or cheddar cheese can be used for a gooey texture.
  • Herbs and Spices: Add herbs and spices like oregano, basil, garlic powder, onion powder, or chili flakes for extra flavor.
  • Binding Agents: Eggs and breadcrumbs act as binding agents, helping the zucchini balls stay together. Adjust the amount of breadcrumbs based on the desired consistency.
  • Pan-frying or Baking: You can either pan-fry the zucchini balls for a crispy texture or bake them for a healthier option with reduced oil.
  • Serving Suggestions: Serve the zucchini balls hot as appetizers or snacks with your favorite dipping sauce, such as marinara sauce, tzatziki sauce, or ranch dressing.

Conclusion:

These baked zucchini balls are a healthy and delicious way to enjoy zucchini. They are easy to make and can be customized to your liking with different herbs, spices, and cheeses. Whether you pan-fry them for a crispy texture or bake them for a healthier option, these zucchini balls will be a hit at your next party or gathering. So next time you have an abundance of zucchini, try this recipe and impress your friends and family with your culinary skills.
