BAKED YAM AND POTATO CASSEROLE

Baked Yam and Potato Casserole image

I created this dish after getting tired of all those yam recipes using brown sugar and marshmallows. This makes sweet potatoes taste more like they should - a side dish rather than a dessert. Also, you can easily adapt this recipe to vegan simply by using soy cheese. It's worked well for me in the past.

Time 30m

Yield 4 , 4 serving(s)

Number Of Ingredients 6

2 large sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
1 dash white pepper

Steps:

  • Scrub the sweet potatoes and leave the skin on (best part.).
  • I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
  • Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
  • Add the seasonings and toss well again.
  • Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
  • Turn the fries with a spatula and bake for another 10 minutes.
  • Blot any excess oil with paper towels, serve, and enjoy!

Tips:

  • Choose the right yams: Look for yams that are firm and have smooth, unblemished skin. Avoid any yams that have soft spots or bruises.
  • Pierce the yams before baking: This will help the steam to escape and prevent the yams from bursting.
  • Bake the yams at a high temperature: This will help to caramelize the natural sugars in the yams and give them a delicious, slightly crispy exterior.
  • Don't overcook the yams: Overcooked yams will be mushy and bland. Check them for doneness by inserting a fork or toothpick into the center. If it goes in easily, the yams are done.
  • Serve the yams immediately: Baked yams are best served hot and fresh. You can top them with butter, brown sugar, marshmallows, or your favorite toppings.

Conclusion:

Baked yams are a delicious and versatile side dish that can be enjoyed in many different ways. They are a good source of fiber, potassium, and vitamin C. With their naturally sweet flavor, yams are a great way to add a touch of sweetness to your meal. So next time you're looking for a healthy and satisfying side dish, give baked yams a try. You won't be disappointed!
