Time 1h10m

Yield 4

Number Of Ingredients 11

1 head cauliflower, cut into florets
½ cup vegetable broth
1 tablespoon salted butter
1 tablespoon all-purpose flour
⅓ cup heavy cream
1 teaspoon white sugar
¾ teaspoon salt
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
¼ cup grated Parmesan cheese

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 15 to 20 minutes. Drain and let cool enough to handle, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly butter a casserole dish.
  • Transfer florets into the bowl of a food processor. Add broth and puree on high speed until smooth, but with some very small pieces remaining for just a bit of texture.
  • Melt butter in a saucepan over medium heat until a pinch of flour sprinkled into the oil will just begin to bubble. Whisk in flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until flour has turned golden and begins to smell like toast, 3 to 5 minutes.
  • Stir in pureed cauliflower, cream, sugar, salt, white pepper, garlic powder, and onion powder. Set over medium heat and cook, stirring often, until thick, 5 to 10 minutes. Transfer to the prepared dish and sprinkle with Parmesan cheese.
  • Bake in the preheated oven until golden and cheese is melted, 10 to 15 minutes.

Tips:

  • Choose the right cauliflower: Look for a firm, compact cauliflower with tightly packed florets. Avoid any heads with signs of bruising or wilting.
  • Trim the cauliflower properly: Remove the outer leaves and most of the stem, leaving a flat base. Cut the cauliflower into 1-inch thick slices.
  • Enhance the flavor: Before baking, toss the cauliflower slices with a mixture of olive oil, salt, pepper, and any desired seasonings. This will help them roast evenly and develop a delicious flavor.
  • Roast the cauliflower at a high temperature: This will help to caramelize the edges and create a crispy texture. Aim for a temperature of 425°F (220°C).
  • Keep an eye on the cauliflower while it's roasting: It should take about 20-25 minutes, but the cooking time may vary depending on the size of the slices and the oven's temperature. Check the cauliflower regularly to ensure that it doesn't overcook.
  • Add the cheese: Once the cauliflower is tender, remove it from the oven and top it with shredded cheese. Return the cauliflower to the oven and bake until the cheese is melted and bubbly, about 5 minutes.

Conclusion:

Baked Whole Cauliflower with Cheese is a versatile and flavorful dish that can be enjoyed as a main course, side dish, or appetizer. With its crispy roasted exterior and tender, cheesy interior, this recipe is sure to be a hit.
