Time 30m

Number Of Ingredients 17

1/3 cup grated Parmesan cheese (plus additional for serving)
1/3 cup Italian-seasoned breadcrumbs (whole wheat if possible)
3 tablespoons finely chopped fresh herbs (basil, parsley, or chives a combo, plus additional for serving)
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 pound 93% lean ground turkey (keep in your refrigerator until the last possible second)
1 large egg
1 1/2 tablespoons extra-virgin olive oil (plus more as needed)
Prepared pasta sauce
Cooked whole wheat pasta or zucchini noodles
Creamy Polenta
Split and toasted hoagie buns
Prepared brown rice

Steps:

  • Preheat your oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and coat with nonstick spray.
  • In a large mixing bowl, add the cheese, bread crumbs, herbs, salt, garlic powder, onion powder, oregano, pepper, and red pepper flakes and stir well to combine. Add the turkey.
  • In a small bowl, beat the egg, then add it to the meat mixture. With a fork or your fingers, mix just until combined, being careful not to compact the meat.
  • With a scoop or spoon, scoop the meat and shape into 1 1/2-inch meatballs. Arrange on the prepared baking sheet. You will have about 20 meatballs total.
  • Brush the tops of the meatballs with the olive oil.
  • Bake for 15 minutes, or until the meatballs reach an internal temperature of 165 degrees F on an instant-read thermometer. As an alternate way to check, a meatball in the center of the baking sheet should be fully cooked through when cut in half.
  • While the meatballs cook, warm the sauce and any other items you'd like to serve them with (pasta, hoagie buns, rice, etc.). Serve the meatballs hot, topped with the sauce, cheese, herbs, and any other additions.

MINI TURKEY MEATBALLS

Categories     main-dish

Time 50m

Yield 42 mini meatballs

Number Of Ingredients 23

1 small onion, grated
3 garlic cloves, minced
1 large egg
1/4 cup dried bread crumbs
3 tablespoons ketchup
1/4 cup chopped fresh Italian parsley leaves
1/4 cup grated Parmesan
1/4 cup grated Pecorino Romano
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pound ground dark turkey meat
3 tablespoons olive oil
26 ounces Simple Tomato Sauce, recipe follows, or store-bought marinara sauce
1/2 cup extra-virgin olive oil
1 small onion, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 cloves garlic, chopped
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Parmesan, Pecorino, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture into 1 1/4-inch-diameter meatballs. Place on a large plate or baking sheet.
  • Heat the oil in a heavy large frying pan over medium-high heat. Add the meatballs and saute until browned on all sides, about 5 minutes. Turn off heat.
  • Transfer the meatballs to a plate. Pour off any excess oil. Add the marinara sauce, about 3 cups. Return all the meatballs to the pan. Turn the heat to medium-low and simmer until the sauce thickens slightly and the flavors blend, 15 to 20 minutes. Season the sauce, to taste, with salt and pepper. Transfer the meatball mixture to a serving bowl. Serve with toothpicks.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

1 pound ground turkey
½ cup Italian-style bread crumbs
½ cup grated Parmesan cheese
1 egg
¼ cup chopped fresh parsley
½ teaspoon kosher salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix turkey, bread crumbs, Parmesan cheese, egg, parsley, and salt together in a large bowl. Form meat mixture with wet hands into balls about 1 1/2 inches in diameter without handling or packing too hard.
  • Bake in the preheated oven until browned, about 20 minutes . An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Nutrition Facts : Calories 280 calories, Carbohydrate 10.4 g, Cholesterol 133.4 mg, Fat 13.2 g, Fiber 0.7 g, Protein 29.6 g, SaturatedFat 4.4 g, Sodium 573.2 mg, Sugar 1 g

Tips:

  • To ensure the meatballs are cooked evenly, use a meat thermometer to check that they have reached an internal temperature of 165°F (74°C).
  • If you don't have a meat thermometer, you can also check for doneness by cutting a meatball in half - it should be cooked through and no longer pink in the center.
  • Serve the meatballs immediately with your favorite sauce or gravy, or store them in an airtight container in the refrigerator for up to 3 days.
  • You can also freeze the meatballs for up to 2 months. To reheat, thaw the meatballs overnight in the refrigerator or at room temperature for about an hour, then heat them in a 350°F (175°C) oven until warmed through.
  • For a healthier version of these meatballs, use ground turkey breast instead of ground turkey thigh.
  • You can also add other vegetables to the meatballs, such as grated carrots, zucchini, or spinach.
  • If you don't have bread crumbs, you can use crushed crackers or oats instead.

Conclusion:

These baked turkey meatballs are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or party food. They are easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give these turkey meatballs a try!
