1 sprig fresh rosemary, leaves stripped and finely chopped
1 clove garlic, minced
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Brush baking sheet with about 1 tablespoon olive oil.

Since we love lots of spice, I use Tabasco brand spicy brown mustard but any brand brown mustard will do for this recipe, I also add in a pinch of cayenne pepper too! Recipe can easily be doubled.

3 large firm ripe tomatoes (sliced about 1/2-inch thick or a bit smaller)
4 tablespoons mayonnaise
5 tablespoons parmesan cheese (can use a bit less)

1 teaspoon dried oregano (or to taste)
salt and pepper
1/2 cup grated mozzarella cheese (or to taste)
chopped fresh parsley
