BAKED TILAPIA WITH TOMATOES AND ONIONS

- Preheat oven to 450 degrees. Rinse off tilapia fillets and pat dry with paper towels. Season both sides of Tilapia with Old Bay, Seasoning Salt, Sea Salt, and Pepper then set aside. Lay out a sheet of aluminum foil long and wide enough for both tilapia to fit and so you can fold up the sides to prevent juices from running during baking. Drizzle olive oil on the foil along with the Lemon and Garlic Dill Sauce. Lay tilapia on top then distribute the diced tomato and onions across tilapia fillets. Fold edges of aluminum foil to create a "pocket" for the fillets and make sure its sealed. Place foil pocket in the oven and let baked for approximately 15 mins. During the 15 mins, you can also whip up a rice pilaf if you desire. After the 15 mins remove tilapia from oven and immediately serve over a bed of rice pilaf.

- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.

- Pat the fish dry and season to taste with salt and pepper. Oil one or two baking dishes large enough to accommodate the fish in one layer. Lay the fish in the dish and pour on the lemon juice. Refrigerate for 30 to 60 minutes while you prepare the remaining ingredients.
- Preheat the oven to 375 degrees. Heat the oil over medium heat in a large, heavy skillet and add the onions. Cook, stirring often, until they have softened and begun to color slightly, 8 to 10 minutes. Add a generous pinch of salt and the garlic and cook, stirring, until the garlic is fragrant, 30 seconds to a minute. Stir in the tomatoes, sugar, paprika, cinnamon, dissolved tomato paste, wine, half the parsley and more salt and pepper to taste and bring to a simmer. Simmer uncovered, stirring often, until the sauce has cooked down a bit and is very fragrant, about 15 minutes. Remove from the heat and pour over the fish. Sprinkle on the remaining parsley.
