2 yellow bell peppers
1 sweet onion, finely chopped
1 can crushed tomatoes, drained
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons olive oil
3 tablespoons pine nuts
4 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh breadcrumb

Steps:

  • Preheat the oven to 375 degrees.
  • Lightly oil a 13x9 inch baking pan.
  • Trim tops off peppers; discard the stems and finely chop the rest of the top of the pepper.
  • Cut each pepper lengthwise into sixths.
  • Place wedges, but side up, in oil pan; set aside.
  • Combine chopped pepper tops, onion, tomatoes, parsley, 1/4 cup olive oil, pine nuts, garlic, salt and pepper in a medium sized bowl.

4 garlic cloves, finely chopped
1 tsp salt
1/4 tsp pepper
1/4 c bread crumbs, fresh
1/4 c parsley, fresh and chopped

  • 1. Preheat oven to 375 degrees.
  • 2. Lightly oil 13 x 9 inch baking pan.
