1 1/2 pounds 15/20 count shrimp, peeled and deveined, tails on
2 tablespoons avocado or canola oil
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces lump crab meat
1/3 cup grated parmesan, separated
1/3 cup plain breadcrumbs
1/3 cup mayonnaise
1/3 cup green onions, sliced
1 large egg, slightly beaten
2 tablespoons diced pimientos, drained
2 tablespoons chopped parsley
1 teaspoon Old Bay Seasoning
Zest and juice of a lemon

Steps:

  • Preheat the oven to 400°F and have ready a rimmed baking sheet lined with either parchment paper or aluminum foil.
  • Pat the shrimp dry with a paper towel. Then, working with one shrimp at a time, lay it back-side down (a.k.a. leg-side up). Use a paring knife to make a small incision down the shrimp, from the start of the tail, cutting toward the head of the shrimp. Continue doing this until the shrimp is butterflied and can lay flat. Do your best not to cut all the way through the body of the shrimp.
  • Transfer the shrimp to a large bowl, drizzle with oil, sprinkle evenly with the salt and pepper, and very gently toss to coat. Transfer to the baking sheet and set aside.
  • In a medium-sized mixing bowl, combine the crab, parmesan cheese, plain breadcrumbs, mayonnaise, green onions, beaten egg, pimiento peppers, chopped parsley, Old Bay seasoning, lemon zest, and juice. Gently, fold the mixture together until well combined.
  • Add tablespoon-sized spoonfuls of the crab mixture on top of each shrimp, and bring up the tail, tucking it gently into the stuffing.
  • Bake for about 16-20 minutes, or until the shrimp are completely opaque and pink in color. Allow to cool slightly, serve and enjoy!

1 Dozen OR 12 Colossal Prawns shell on, deveined (fresh or frozen)
1/3 Cup Finely chopped white onion.
1 tablespoon Finely Chopped Garlic.
5 tablespoons Butter
1/4 cup roughly chopped crab meat ( either packaged or fresh).
1/4 cup roughly chopped pollock fish or any white fish.
1/4 cup roughly chopped white bread (any, we used ciabatta)
2 tablespoons roughly chopped celery.
14 Ritz crackers ( roughly crushed, not fine)
3 tablespoons Mayonnaise.
1 teaspoon crushed pepper powder.
3 tablespoons bread crumbs (any, we used the regular variety)
1 large egg.
Salt (to taste)

Steps:

  • How To Make the Stuffing:1. Over medium-high heat melt the butter & then add the chopped onion and garlic and saute for 5 mins.2. In a clean dry bowl take the roughly crushed Ritz crackers and add the sauteed onion + garlic and mix everything well.3. Next, add the mayonnaise to the above mixture and mix well.4. Now add the chopped Pollock fish, bread, celery & crabmeat and mix everything well.5. Crack one egg and add to the above mixture, mix well to bind everything.6. Next, add the crushed pepper and salt and mix well until everything comes together into a nice doughy form ( refer the stepwise pictures).7. The stuffing is ready.How to Stuff the butterflied Prawns with the stuffing:1. Line a cookie sheet with aluminum foil and spray or brush oil.2. 1/2 pound scallops, chopped, or lump crabmeat, picked over

32 Ritz crackers (about two thirds of a 12-ounce package), crushed into coarse crumbs
18 jumbo shrimp (about 2 pounds), shelled, leaving tail and connecting shell segment intact
2 tablespoons unsalted butter

2 tbsp. lemon juice
1 tsp. minced parsley
30 Ritz crackers, crumbled
20 jumbo shrimp, cleaned deveined, butterflied

Steps:

  • 1 Melt butter and add lemon juice mixing well. In a large bowl, crumble Ritz crackers well and add parsley to mixture 2 Clean, devein and butterfly shrimp by cutting shrimp horizontally but not all the way through, open shrimp to look like butterfly leaving the tails on.
