In my group "Flavors of Cape Cod", ~this dish will be popular. In the restaurants on the Cape it is served. Now you can use lobster, scallops or shrimp, no matter, I sometimes throw some firm fish chunks in ~ or canned crabmeat, create your own. But the result is always good and easy to make !

1/2 lb scallops
1/2 lb shrimp or lobster, etc
2 onions, diced (green)
1 Tbsp parsley
1 can(s) cream of shrimp soup
3 Tbsp flour
1/2 c milk
1/2 c shredded monterey jack cheese
2 Tbsp butter, melted
1/2 tsp paprika
1/2 c bread crumbs

Steps:

  • 1. Mix flour, cream of shrimp soup, onion and milk Fold in shrimp and scallops and put in a 1 quart casserole. Spread shredded cheese over shrimp and scallop mixture. Toss bread crumbs and melted butter and sprinkle over cheese.
  • 2. Bake in oven, 350 degrees for 30 minutes. Serve over rice or toast points.

Oh I love simple recipes and scallops ~ so when I found this recipe oh yea had to make it pronto! This recipe came from a treasured cookbook I have ~ Savoring Cape Cod.

1 pt bay scallops
1/2 c butter or margarine, melted
1 c crackers crumbs (coarsely crushed ritz or similar)
1/2 c fresh bread crumbs
2/3 c half and half

Steps:

  • 1. Preheat oven to 400 degrees Butter a baking dish just large enough to contain the scallops in a single layer.
  • 2. Stir cracker crumbs and bread crumbs into melted margarine or butter. Spread a thin layer in bottom of dish, add scallops, cover with remaining crumbs. Pour half and half around the edge.
  • 3. Bake until crumbs are brown and scallops are just cooked. Bay scallops will cook in 10-12 minutes. They should be opaque white throughout but do not overcook. Serves 4

1 1/2 c ground clams
1 1/4 c plain breadcrumbs
1 1/4 c seasoned breadcrumbs
1/2 large onion, chopped
1/2 large pepper, chopped
2 Tbsp butter
2 Tbsp chopped parsley
1/2 c clam broth
18 clam shells
1 lemon
paprika

Steps:

  • 1. Saute' onions and pepper in butter or margarine until soft. Mix all ingredients together. Stuff into clam shells. Put pat of butter on each clam and sprinkle with paprika. Squeeze a few drops of juice over each clam. Bake in pre-heated oven for 15 minutes at 350 degrees.

1 lb sea scallops cut if they are huge.
1 3/4-1 sleeve town house crackers only. do not substitute
1 pinch salt
1 pinch black pepper
1 tsp dried parsley ( use fresh if wanted)
1/4 tsp thyme, dried
1/2 tsp paprika
1/2 tsp basil, dried
1/2 a lemon
6 Tbsp butter
1-2 c milk for soaking

Steps:

  • 1. Gather all ingredients. Note: To stuff lobster tails with this mixture. Use small bay scallops instead of sea scallops.
  • 2. Soak scallops in milk for at least a 1/2 hour. This helps sweeten the scallops, and make them more tender. Set oven to 350 degree's
  • 3. Remove scalops from milk. Strain with sieve. Lightly pat dry with paper towel
  • 4. crush crackers in a bowll with hands. Do not pulverize them into crumbs. You want them a tiny bit chunky. Mix cracker crumbs with parsley thyme, basil, paprika, salt and pepper.
  • 5. Place scallops in a bowl . Mix a squeeze of lemon with 1/2 the butter. Pour over scallops and toss.
  • 6. Sprinkle half the cracker crumb mixture on a sheet pan. Bake until turning golden. Sprinkle over the scallops and toss to combine.
  • 7. Toss remaining cracker crumbs with butter and a squeeze of lemon. Sprinkle over the top of the scallops. Place in oven and bake for 20-30 minutes, or until cooked thtough. Turn oven on to broil to make crumbs golden brown on top. Remove from oven and serve.

1/2 cup margarine
1 medium onion, finely chopped
1 teaspoon minced garlic
1/8 teaspoon parsley flakes
1/2 cup sherry wine
