6 6 to 8-ounce) 1 8-ounce) beef blade steaks, 1 inch thick, trimmed
Salt and pepper
1/3 1/3 1/3 cup cornstarch
1/4 1/4 1/4 cup vegetable oil
1 1 1 tablespoon water
1 1 1 tablespoon soy sauce
1 1 1 tablespoon tomato paste
2 2 2 onions, halved and sliced thin
8 8 8 ounces cremini mushrooms, trimmed and sliced thin
2 2 2 garlic cloves, minced
1 1 1 teaspoon chopped fresh rosemary
2 2 2 tablespoons chopped fresh parsley

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 300 degrees. Pat steaks dry with paper towels and season with salt and pepper. Spread cornstarch in shallow dish. Working with 1 steak at a time, dredge steaks in cornstarch, shaking off excess, and transfer to plate. 2. Heat 2 tablespoons oil in 12-inch skillet over medium-high heat until just smoking. Add 3 steaks at a time and cook until browned, about 3 minutes per side, then return to plate. Repeat with remaining 2 tablespoons oil and remaining 3 steaks. 3. Remove skillet from heat and discard oil. Combine water, soy sauce, and tomato paste in now-empty skillet, scraping up any browned bits. Stir in onions, mushrooms, garlic, rosemary, and 1/4 teaspoon salt. Place steaks in single layer on top of onion mixture and add any accumulated steak juices. 4. Cover skillet, transfer to oven, and bake for 2 hours. Uncover and continue to bake until steaks are browned and fork tender, about 30 minutes longer. 3 pound roast cut of top sirloin steak, boneless
3 tablespoons olive oil, divided
1 teaspoon salt
1 teaspoon ground black pepper
4 large yellow onions, peeled and thinly sliced
3 large cloves garlic, finely chopped
1 small bunch flat parsley leaves, roughly chopped, about 1/4 cup
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
8 portobello mushroom caps
2 tablespoons flour
1/2 cup dry red wine
1 cup beef stock or broth

Steps:

  • Preheat oven to 425 degrees.
  • Rub steak with 1 tablespoon olive oil. Season beef with salt and pepper. In a large casserole on the stovetop, sear beef on both sides. To a heavy roasting pan add onions and 2 tablespoons olive oil and roast in oven for 20 minutes, to begin caramelizing onions. Place charred roast on top of onions and roast until internal temperature is 135 degrees (for medium rare), or higher, about 45 minutes. In final 15 minutes (internal temperature of beef should be approximately 120 degrees), mix garlic, parsley, extra virgin olive oil, and lemon juice. Brush mix on steak as roasting marinade and brush on mushroom caps. Add mushroom caps to roasting pan while the beef cooks for final 15 minutes.
  • Remove roast, place on carving board, and allow to rest. Place onions and mushroom caps on platter.
  • Pour excess fat from roasting pan, leaving 1 tablespoon. Add flour and cook on stovetop for 2 minutes. Add wine and reduce by half. Add broth and cook for 2 minutes.
  • Carve roast. Serve with onions, mushrooms and gravy.

1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon ground mustard
2 tablespoons panko bread crumbs
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
2 tablespoons butter
8 ounces crimini mushrooms, cleaned well and quartered
1 small onion, minced
1 teaspoon finely chopped thyme leaves
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup brandy
2 cups low-sodium beef stock

  • Preheat the oven to 350 degrees F.
  • Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
  • Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
  • Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
  • Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.

1 medium onion, sliced into wedges
2 tablespoons butter
