Time 25m

Number Of Ingredients 5

1 delicata squash...1/2 inch slices
1 Tbsp olive oil
2 Tbsp butter, melted
salt & pepper...to taste
1 Tbsp chopped fresh or dried...thyme

Steps:

  • 1. Pre-heat oven to 425F Wash & slice squash, into 1/2 to 3/4 inch slices. Cut out center with the seeds.
  • 2. Put slices on a cookie sheet, (I line mine with foil) Do not let them touch each other.
  • 3. Brush on the mixed, olive oil & butter. Turn and brush again. Salt & pepper, and thyme...if wanted. Bake for 20 minutes. Turn once after 10 minutes. When ready to serve stack up onto a plate....like a leaning tower !...The skin on delicata can be eaten.

Tips:

  • Choose the right squash: For best results, select small, firm squash that are free of blemishes. Acorn squash and butternut squash are both good choices.
  • Prepare the squash properly: Cut the squash in half lengthwise and scoop out the seeds. Then, slice the squash into rings about 1/2-inch thick.
  • Season the squash: Before baking, brush the squash rings with olive oil and sprinkle them with salt, pepper, and any other desired seasonings.
  • Bake the squash at a high temperature: This will help to caramelize the squash and give it a slightly crispy exterior.
  • Watch the squash carefully: Squash can easily overcook, so be sure to keep an eye on it while it is baking.

Conclusion:

Baked squash rings are a delicious and versatile side dish that can be enjoyed with a variety of meals. They are also a good source of vitamins and minerals, making them a healthy addition to your diet.
