1 tablespoon mild paprika
1 tablespoon dried parsley
2 teaspoons brown sugar
1 teaspoon dry mustard powder
2 teaspoons salt
1 teaspoon black pepper
1 (3 1/2) pound whole chicken, cut into pieces
2 tablespoons vegetable oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Combine the paprika, parsley, sugar, mustard, salt, and pepper in a small bowl; set aside.
  • Place the chicken pieces in a 9x13 inch baking dish, and coat with the vegetable oil; arrange skin-side up. Sprinkle evenly with the spice mixture.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

4 split chicken breasts,skin on
1/4 tsp black pepper
1/4 tsp turmeric powder
1 garlic clove, peeled and cut in half,then crushed
1/4 tsp cayenne pepper
1/4 tsp brown sugar, light
1/4 tsp salt
2 tsp water,very warm
OPTIONS
better to make a paste of all dry ingredient with 1 tablespoon of oil but i was in a rush!

Steps:

  • 1. Place chicken breasts in roasting pan, Rub the skin well with the crushed garlic,then discard garlic.
  • 2. Mix all dry spice & Brown sugar with 2 Tablespoons of Very warm water, Mix well -- apply coating to the top of chicken skin.
  • 3. Roast chicken 350 till done.40 mins.
  • 4. Add - some chicken broth (about 1/2 C) into roasting pan. Then place chicken on serving plate.
  • 5. Heat pan to medium high heat on burner, be careful, stir broth in pan with a wooden cooking spoon. Remove pan from heat.
  • 6. Pour sauce over chicken, after removing from pan.
