SPANISH RICE WITH GROUND BEEF

Spanish Rice with Ground Beef image

Growing up, my mom made a version of Spanish rice with ground beef that was hearty enough that it stood on its own as a main dish. During a visit a few years ago, after missing her cooking desperately, I watched her prepare it and jotted down the recipe. (Don't worry, I checked with my mom and she's totally on board with sharing with you!) Serve on a bed of fresh spinach with a side of refried beans. Garnish with fresh diced tomatoes, green onions, cheese, avocado slices, and crushed chile flakes.

Tips:

  • For a crispy and flavorful rice dish, use day-old rice. Freshly cooked rice will be too moist and will not brown properly.
  • To add a smoky flavor to the rice, use a pinch of smoked paprika or chipotle powder.
  • If you don't have any beef broth on hand, you can use chicken broth or vegetable broth instead.
  • Feel free to add your favorite vegetables to the rice, such as diced bell peppers, onions, or corn.
  • For a cheesy rice dish, add a cup of shredded cheddar or Monterey Jack cheese to the rice before baking.

Conclusion:

Baked Spanish rice and beef is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice and beef. With its simple ingredients and bold flavors, this dish is sure to please everyone at the table.
