ROASTED SHRIMP WITH BREAD CRUMBS
Mark Bittman brought this recipe to The Times as part of a 2013 shrimp roundup. This especially easy dish cooks them quickly, under high heat and a showering of lemon, olive oil and bread crumbs for brightness paired with comfort. Be sure not to overcook the shrimp. As Mr. Bittman notes, "For the most part, the shrimp will tell you when they're done." Simply make sure they're pink, and pair alongside a salad or over rice.

- Marinate the shrimp: Marinating the shrimp in a mixture of olive oil, lemon juice, garlic, and herbs will help to flavor them and keep them moist during baking.
- Use a high-quality breadcrumb mixture: The breadcrumb mixture is what gives the shrimp their crispy coating. Use a mixture that is made with fresh, flavorful bread and seasoned with herbs and spices.
- Bake the shrimp at a high temperature: Baking the shrimp at a high temperature will help to create a crispy coating and prevent the shrimp from becoming overcooked.
