Provided by Paula Deen

Categories     comfort food

Time 15m

Yield 4

Number Of Ingredients 12

4 (6-8 oz) russet potatoes, scrubbed and pricked all over with a fork
vegetable oil, to coat potatoes
4 slices bacon
1 pound large shrimp, peeled and deveined, tails removed
1 1/2 teaspoons Cajun seasoning
1 teaspoon salt, plus a pinch
4 green onions, thinly sliced, white and light green parts; dark green parts chopped, for garnish
1 cup cheddar cheese, grated
6 tablespoons butter, softened
1/3 cup sour cream
4 tablespoons mayonnaise
3/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 °F.
  • Rub the potatoes with vegetable oil and put them on a baking sheet. Bake the potatoes until tender, about 1 hour.
  • While the potatoes are baking, cook the bacon in a skillet over medium-high heat until crisp, about 7 minutes. Transfer the slices to a paper towel-lined plate to drain, then crumble. Pour off all but 3 tablespoons of bacon grease from the skillet.
  • Cut the shrimp into thirds. Reheat the bacon grease over medium-high heat. Add the shrimp, Cajun seasoning, and a pinch of salt. Cook until the shrimp are opaque, stirring constantly, 2 to 3 minutes.
  • When the potatoes are done, let them cool slightly (leave the oven on). Slice off the top third of each potato and carefully scoop out the flesh into a bowl. Scoop out the potato from the top third, and add that to the bowl, then discard the skin. Leave about 1/4-inch border of potato inside the skin. Mash the potato flesh with 1 teaspoon salt, the green onion, cheese, butter, sour cream, mayonnaise and black pepper. Stuff the potato skins with the filling, mounding any extra on top. Divide the shrimp on top of the potatoes and sprinkle with the crumbled bacon. Return the potatoes to the oven on the baking sheet and bake them until heated through, about 15 minutes. Remove the potatoes from the oven, sprinkle with the reserved chopped green onions and serve.

Provided by HWC Magazine

Categories     Main Course

Time 40m

Number Of Ingredients 9

4 cups potatoes (chopped (we left the peel on))
1 onion (peeled and sliced )
3 tbsp olive oil ((2 tbsp for potatoes and reserve 1 tbsp for shrimp and peppers))
2 tsp garlic powder (dried ground)
2 tsp paprika (dried ground)
2 tsp cumin (dried ground)
salt and pepper (to taste)
2 bell peppers (chopped)
12 oz shrimp (large peeled, deveined and tail removed.)

Steps:

  • Preheat oven to 425 degrees F (218 degrees C)
  • Chop potatoes into 1.5-inch sections. Try to keep them all the same size so they cook evenly. Dry very well with a paper towel (very important step)
  • In a large bowl, add chopped potatoes, 2 tablespoons olive oil (reserve 1 tablespoon of olive oil for shrimp and peppers) onions, 1 tsp garlic powder, 1 tsp paprika, 1 tsp cumin powder, salt and pepper and toss well. (reserve the other teaspoons of garlic powder, paprika and cumin powder for the shrimp and peppers) You can also do this step right on the baking sheet pan, if you do not want to dirty another bowl.
  • Place seasoned potatoes and onion on a lined sheet pan in a single layer. (line your baking sheet with aluminum foil and you can thank us later as clean-up is a snap) Make sure there is no overlapping of potatoes.
  • Bake potatoes and onions for 20 minutes and then toss. Place back in the oven to continue baking.
  • In the meantime, Unthaw, peel and devein shrimp and remove tail. Dry well. Set aside. Chop your bell peppers.
  • Toss your shrimp, bell peppers, 1 tablespoon olive oil, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1 teaspoon of cumin, salt and pepper together. At the 24 minute mark of baking, add your seasoned shrimp and bell pepper mixture to the roasted potatoes, toss and spread out in an even layer to continue roasting for 6-8 minutes or until the shrimp are no longer translucent.
  • Test to make sure your potatoes are fork tender and your shrimp are no longer translucent. Your shrimp should be nice and pink. Remove from the oven. Enjoy!

Tips:

  • Choose fresh shrimp: Fresh shrimp should have a briny smell and a slightly firm texture. Avoid shrimp that is slimy or has a strong odor.
  • Use a variety of potatoes: You can use any type of potato for this recipe, but Yukon Gold or red potatoes work well. For a more colorful dish, try using a mix of different types of potatoes.
  • Don't overcrowd the pan: When baking the shrimp and potatoes, make sure to spread them out in a single layer so that they cook evenly.
  • Season the shrimp and potatoes well: Use a variety of seasonings to flavor the shrimp and potatoes, such as garlic, paprika, salt, and pepper. You can also add a squeeze of lemon juice or a splash of white wine.
  • Bake until the shrimp is cooked through: The shrimp should be cooked until it is opaque and pinkish-white in color. Overcooking will make the shrimp tough and rubbery.

Conclusion:

Baked shrimp and potatoes is a simple and delicious dish that is perfect for a weeknight meal. It is easy to make and can be customized to your liking. With a few simple tips, you can make sure that your baked shrimp and potatoes turn out perfectly every time.
