16 sea scallops, rinsed and drained
5 tablespoons butter, melted
5 cloves garlic, minced
2 shallots, chopped
3 pinches ground nutmeg
salt and pepper to taste
1 cup bread crumbs
4 tablespoons olive oil
¼ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.
  • In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.
  • Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

1 1/2 lbs sea scallops
1/3 lb bacon, cut slices in half
1/4 lb butter, melted
1/2 cup dry white wine
1 tablespoon lemon juice
1/2 teaspoon paprika
1/2 teaspoon seasoned salt

Steps:

  • Preheat oven to 400 degrees. Melt butter and wine together, when melted add paprika, seasoned salt, and lemon juice. Drop scallops into melted wine and butter sauce. Allow scallops to marinade for about 30 minutes. Wrap each scallop with half piece of bacon, and fasten bacon with a toothpick. Place wrapped scallops onto a baking sheet, and bake in the oven for about 8 minutes, then turn over and bake for another 8 minutes or until the scallops are opaque.

1 lb sea scallops cut if they are huge.
1 3/4-1 sleeve town house crackers only. do not substitute
1 pinch salt
1 pinch black pepper
1 tsp dried parsley ( use fresh if wanted)
1/4 tsp thyme, dried
1/2 tsp paprika
1/2 tsp basil, dried
1/2 a lemon
6 Tbsp butter
1-2 c milk for soaking

Steps:

  • 1. Gather all ingredients. Note: To stuff lobster tails with this mixture. Use small bay scallops instead of sea scallops.
  • 2. Soak scallops in milk for at least a 1/2 hour. This helps sweeten the scallops, and make them more tender. Set oven to 350 degree's
  • 3. Remove scalops from milk. Strain with sieve. Lightly pat dry with paper towel
  • 4. crush crackers in a bowll with hands. Do not pulverize them into crumbs. You want them a tiny bit chunky. Mix cracker crumbs with parsley thyme, basil, paprika, salt and pepper.
  • 5. Place scallops in a bowl . Mix a squeeze of lemon with 1/2 the butter. Pour over scallops and toss.
  • 6. Sprinkle half the cracker crumb mixture on a sheet pan. Bake until turning golden. Sprinkle over the scallops and toss to combine.
  • 7. Toss remaining cracker crumbs with butter and a squeeze of lemon. Sprinkle over the top of the scallops. Place in oven and bake for 20-30 minutes, or until cooked thtough. Turn oven on to broil to make crumbs golden brown on top. Remove from oven and serve.

4 Tbsp sweet butter, unsalted
1 1/2 lb fresh or frozen sea scallops
1 tsp onion powder
1 tsp paprika, sweet mild
1 tsp oregano, dried
2 clove garlic, minced
1/4 c parmesan cheese, freshly grated
1/4 c panko bread crumbs

Steps:

  • 1. If you want a great sauce that fits this recipe to a tea, then check out my Hearts of Palm sauce recipe... I got it from a German chef who lived on Grand Cayman Island.
  • 2. Preheat oven to 400 degrees F (200 degrees C), and place the rack in the middle position.
  • 3. Melt the butter in a small butter warmer, small saucepan, or you could always nuke it in the microwave. Chef's Note: We all use the microwave for a variety of purposes; however, when you use it to melt butter, slow is the way to go... a low setting for about 3 minutes.
  • 4. Pour the melted butter into a casserole dish; something around two quarts is perfect. Chef's Note: Since you will be using this dish for presentation, if you have something nice... use it.
  • 5. Place the scallops in the dish, and evenly distribute them in rows and columns over the butter.
  • 6. Take the breadcrumbs, onion powder, paprika, oregano, minced garlic and parmesan cheese, and combine in a small mixing bowl. Chef's Note: You best tools for doing this are your hands... that way you can break up any lumps.
  • 7. Sprinkle the mixture evenly over the scallops.
  • 8. Bake until scallops are firm; or until an instant-read thermometer reads 146f (64c) this will take about twenty minutes.
  • 9. How to Tell if a Scallop is Fresh Look: A good scallop will be cream colored or light beige. Scallops that are tinged with pink are too old and should be avoided. Moisture: Good scallops will be relatively dry. Scallops sitting in liquid are past their prime. Avoid Scallops that are sitting in a milky liquid. Smell: Fresh scallops have a slightly sweet aroma. Bad scallops smell like sulfur or ammonia. Touch: A fresh scallop will be firm to the touch. Scallops too old to eat are soft and slimy.
  • 10. Chef's Note: Microwaving a scallop can cause it to explode... I HATE it when that happens.

  • Select high-quality sea scallops. Look for scallops that are plump and have a slightly sweet smell. Avoid scallops that are discolored or have a slimy texture.
  • Properly clean the sea scallops. Remove the tough side muscle from the side of each scallop. Rinse the scallops thoroughly under cold water and pat them dry with a paper towel.
  • Season the scallops simply. A little salt, pepper, and garlic powder are all you need to enhance the natural flavor of the scallops.
  • Cook the scallops over medium-high heat. This will help to sear the scallops and prevent them from becoming tough.
