ROASTED SLASHED FILLET OF SEA BASS STUFFED WITH HERBS, BAKED ON MUSHROOM POTATOES WITH SALSA VERDE -- A LA TONY BLAIR

Roasted Slashed Fillet of Sea Bass Stuffed with Herbs, Baked on Mushroom Potatoes with Salsa Verde -- a la Tony Blair image

This is something I cooked for Tony Blair and the Italian Prime Minister at the British/Italian Summit last year. It went down a treat so I thought I'd put it in the book. This is a really great way to cook sea bass. Try and get the biggest bass you can find. Failing that, royal bream is fantastic cooked this way too.

Yield Yield: 4 servings

Number Of Ingredients 21

4 (8ounces) sea bass fillets
1 handful mixed herbs (green or purple basil, parsley), roughly chopped
2 1/2 pounds potatoes scrubbed
Olive oil
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
1 1/4 pounds mixed, preferably wild, mushrooms, sliced
Handful parsley leaves, chopped
4 lemons
1 recipe salsa verde, recipe follows
2 cloves garlic, peeled
1 small handful of capers
1 small handful pickled gherkins (the ones in sweet vinegar)
6 anchovy fillets
2 large handfuls flat-leaf parsley, leaves picked
1 bunch fresh basil, leaves picked
1 handful fresh mint, leaves picked
1 tablespoon Dijon mustard
3 tablespoons red wine vinegar
8 tablespoons best quality olive oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 240C/475F/Gas 9. Slash the fish fillets about half way down and stuff with the herbs. Wash the potatoes and slice them lengthways, just under a 1/2-inch thick. Dry them off with kitchen paper and very lightly coat them in olive oil. Mix in half of your finely chopped garlic, season with salt and pepper, then lay them out in one layer on a flat baking tray. It is always helpful to put a bit of greaseproof on the bottom of the tray, rubbed with olive oil. Lay your potatoes out in a thin layer and put it in the oven for around 12 minutes until they are lightly golden and soft. Remove and put to one side. In a pan add the remaining garlic with 2 good knobs of butter and sprinkle with parsley. Now scatter the mushrooms over the potatoes. Place your sea bass fillets on top, cut the lemons in half and place in the tray as well. Now bake in the oven for 12 to15 minutes, depending on the thickness of the fish. Remove the tray, cover the top with foil and let sit for about 5 minutes during which time all the juices will run out onto the potatoes. Serve it with salsa verde and a crisp white wine.
  • The secret of a good salsa verde is to chop all the ingredients very finely and to use it the same day, as it doesn't tend to keep for long, even in the fridge. A fantastic accompaniment to any grilled meat or fish. Particularly good with sea bass recipe.Finely chop the first 7 ingredients and put them into a bowl. Add the mustard and red wine vinegar then slowly stir in the olive oil. Balance the flavors with freshly ground black pepper and, if necessary, sea salt and a little more red wine vinegar.

Time 1h25m

Yield 3 to 4 servings

Number Of Ingredients 16

Bunch fresh cilantro sprigs, washed, leaves picked
5 teaspoons fresh lemon juice
2 cloves garlic, left whole
1 (3/4-inch) piece fresh ginger, peeled
2 green chiles, seeded
3 1/2 ounces freshly grated coconut
20 pistachio nuts, shelled
1 teaspoon cumin seeds
Vegetable oil, for frying, plus 1 tablespoon
1/2 teaspoon brown mustard seeds
Kosher salt and freshly ground black pepper
1 pound 4 ounce sea bass, butterflied (ask your fishmonger to do this for you), skin scored at 1-inch intervals
1 tablespoon vegetable oil
New potatoes, boiled
Green salad
1 lemon, cut into wedges

Steps:

  • For the chutney: Blend the cilantro, lemon juice, garlic, ginger, chiles, coconut, pistachios, and cumin in a food processor to a puree.
  • Heat a small amount of the vegetable oil in a small saucepan over a medium heat. When the oil is hot, add the mustard seeds. Be careful of the popping mustard seeds and splattering of oil. When the mustard seeds start to pop, remove the pan from the heat, and add the seeds to the chutney mixture. Season the mixture well with salt, and freshly ground black pepper.
  • In a separate bowl, mix 2 tablespoons of the chutney mixture with 1 tablespoon vegetable oil. Brush the chutney mixture all over the sea bass, and set aside to marinate for 20 to 30 minutes.
  • While the fish is marinating, preheat the oven to 350 degrees F.
  • When the fish has marinated, spoon the remaining chutney mixture into the cavities of the sea bass. Place the stuffed sea bass onto a sheet pan, and bake in the oven for 15 to 20 minutes, or until the flesh of each sea bass is opaque.
  • To serve the dish, divide the stuffed sea bass among four serving plates. Spoon a portion of the new potatoes and green salad alongside. Garnish each plate with a wedge of lemon.

BAKED CHILEAN SEA BASS RECIPE

Baked Chilean Sea Bass Recipe image

This easy baked Chilean sea bass recipe is buttery, flaky, tender, and drizzled with a velvety smooth beurre blanc sauce. Ready in 20 minutes!

Provided by Maya Krampf

Categories     Main Course

Time 20m

Number Of Ingredients 13

4 5-oz Chilean sea bass fillets ((or other sea bass variety))
3 tbsp Olive oil
1/2 tbsp Lemon juice
1/2 tsp Garlic powder
3/4 tsp Sea salt
1/4 tsp Black pepper
1/2 medium Shallot ((minced))
1/3 cup White wine
1 1/2 tbsp White wine vinegar
1 tbsp Heavy cream
1 tsp Lemon zest
1/2 cup Unsalted butter ((cut into small teaspoon-sized cubes, very cold, keep refrigerated until right before using))
1/4 tsp Sea salt ((to taste))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C).
  • In a small bowl, whisk together olive oil, lemon juice, and garlic powder.
  • Arrange sea bass fillets in a stoneware baking dish, with space between them. Use paper towels to pat them dry.
  • Brush the fish fillets on both sides with the olive oil mixture. Season both sides with garlic powder, sea salt, and black pepper.
  • Bake for 12-15 minutes, until the sea bass internal temperature reaches 135 to 140 degrees F, or the fish flakes easily with a fork. (For best results, use an instant-read thermometer -- it's done when it reaches 135 to 140 degrees F.)
  • Meanwhile, in a very small saucepan (about 5 inches in diameter) over medium-high heat, combine the shallot, wine, & vinegar. Bring to a boil, then reduce heat to medium and simmer for about 3-5 minutes, until the volume is reduced to about 1/4 of the original amount (approximately 2 tablespoons should be left).
  • Stir in the heavy cream and lemon zest.
  • Reduce heat to low. Add 2-3 cubes of very cold butter, stirring constantly until it melts. Continue to add butter 2-3 cubes at a time, stirring and letting it melt after each addition. Keep heat very low and avoid boiling, or the sauce will separate.
  • Season with sea salt to taste.
  • Serve sauce over baked sea bass immediately, or keep warm in a thermos or in the hot pan on the stove (with heat turned off) for up to 30-60 minutes. The sauce can split if it overheats or cools too much, so keep it warm but not hot.

CRABMEAT CRUSTED CHILEAN SEA BASS

Crabmeat Crusted Chilean Sea Bass image

My boyfriend and I just finished having this for dinner -- wonderful!! I had to tweak the original recipe, and what follows is the end result. I'm sure the crust could actually be used on all kinds of fish -- Chilean sea bass is pretty expensive (ours was almost $30/lb), but you could likely substitute any kind of white fish with good results.

Tips:

  • Choose the freshest sea bass possible. Fresh sea bass will have bright, clear eyes, red gills, and a firm, white flesh. Avoid fish that has a dull, cloudy appearance or an unpleasant odor.
  • Stuff the sea bass with a variety of seafood. This recipe calls for shrimp, scallops, and crab, but you can use any type of seafood you like. Just make sure that the seafood is cooked through before stuffing the fish.
  • Use a flavorful white wine in the sauce. The white wine will help to deglaze the pan and create a delicious sauce. Choose a wine that you enjoy drinking, as the flavor of the wine will come through in the sauce.
  • Serve the sea bass immediately. Baked sea bass is best served immediately after it comes out of the oven. The fish will be moist and flaky, and the sauce will be hot and flavorful.

Conclusion:

Baked sea bass stuffed with shellfish is a delicious and elegant dish that is perfect for a special occasion. The fish is cooked to perfection, and the stuffing is packed with flavor. The sauce is also very flavorful, and it complements the fish perfectly. This dish is sure to impress your guests, and it is a great way to enjoy fresh seafood.
