2 lb Potatoes
salt and pepper to taste
1 tb Thyme
2 cubes Beef stock
1 lb Sausages
1 lb Onions
1 tb Sage

Steps:

  • Peel & slice the potatoes & peel & chop the onions. Dice the sausages. In a baking dish put a layer of potatoes, a layer of onions & a layer of sausage. Season to taste & sprinkle over half the herbs. Continue the layers until you have used up all the ingredients, ending with a layer of potatoes. Sprinkle on the rest of the herbs. Dissolve the stock cubes in 1 pint of hot water & pour into the baking dish. Bake in a med oven 350, for 40 minutes. Serve with crisp green cabbage. 2 beef bouillon cubes or 3 teaspoons beef bouillon powder
salt and pepper

Steps:

  • Preheat the oven to 350F and lightly grease your baking dish.
  • Peel and thinly slice the potatoes; peel and chop the onions.
  • Dice the sausages.
  • In a baking dish put a layer of potatoes, a layer of onions and a layer of sausage.
  • Season to taste and sprinkle over half the herbs.

3 lbs of 'old' potatoes
4 ounces beef drippings
1 large onion
1 (15 ounce) can of chopped corned beef
2 -3 tablespoons water
1 beef stock cube
gravy
salt, and brown (to season)

Steps:

  • Melt the dripping and fry the onions in a large pan until translucent.
  • Peel and slice the potatoes (about 1/4" thick).
  • Rinse the starch out of the potatoes before adding to the pot.
  • Dissolve the stock cube in the water and add to the pan.
  • Cover and cook the potatoes on a medium heat for approx 40-45 minutes.
  • Stir occasionally.
  • When the potatoes are soft, add the corned beef and stir vigorously until the potatoes break up.
  • Add gravy salt (Burdalls) to brown and season.
  • Serve with oatcakes.

Sometimes also called 'stovies' this Scottish recipe derives from the French etouffer, to cook in a closed pot, and dates from the strong Scottish/French links of the seventeenth century. It makes a filling family dish which can safely be left to its own devices; a little extra cooking time will not spoil the flavour.

2 tablespoons butter (divided)
1 tablespoon vegetable oil
4 chicken quarters, halved
4 ounces bacon, chopped
2 1/2 lbs potatoes, peeled and cut into 1/4 inch slices (starchy kind)
2 large onions, sliced
salt and pepper, to taste
2 teaspoons chopped fresh thyme (or 1/2 tsp dried thyme)
2 cups chicken stock
fresh chives, to garnish

Steps:

  • Heat half of the butter and the oil in a large frying pan and fry the chicken and bacon for 5 minutes, until lightly browned.
  • Place a thick layer of potato slices, then onion slices, in the base of a large ovenproof casserole. Season well, add the thyme and dot with half the remaining butter.
  • Add the chicken and bacon, season to taste and dot with the remaining butter. Cover with the remaining onions and finally a layer of potatoes. Season and dot with butter. Pour over the stock.
  • Cover and bake at 150°C (300°F) mark 2 for about 2 hours, until the chicken is tender and the potatoes are cooked, adding a little more hot stock if necessary.
  • Just before serving sprinkle with snipped chives.

stock cube, any type
1 tbsp sunflower or vegetable oil
1 small onion , halved and thickly sliced
3 thick pork sausages , cut in half
1 large carrot , peeled and cut into chunks
1 large or 2 medium potatoes , skin left on, cut into big chunks
200g swede , peeled and cut into big chunks (or use another large carrot)

Steps:

  • Crumble half the stock cube into a mug and top up with boiling water. Stir until dissolved. Heat the oil in a frying pan, then fry the onion and sausage pieces for 5 mins until the meat is browned, but not cooked through. Tuck the vegetable chunks around the sausages and onions, season well with black pepper and salt to taste, then add 4 tbsp of the stock.
  • Cover the pan with a lid or large piece of foil, making sure there are no gaps at the edges. Turn the heat to medium and leave for 25 mins until the veg are tender and the sausages cooked through. Stir at the end of cooking time - the veg will have caramelised against the bottom of the pan and almost all of the cooking liquid will have been absorbed.

30g lard or butter
1 onion , finely chopped
½ swede , peeled and cut into 2cm cubes (400g prepped weight)
2 large carrots , peeled and cut into 2cm cubes
1 celery stick, finely chopped
500g leftover roast meat (lamb or beef), or corned beef, cubed
700g potatoes , peeled and cut in to 3cm cubes
500ml beef or lamb stock
oatcakes or crusty bread, to serve

Steps:

  • Heat the lard or butter in a medium sized saucepan. Add the onion and fry for 10 mins over a low-medium heat until softened. Add the swede, carrot and celery and fry for 5 mins.
  • Stir in the meat, if using leftover roast lamb or beef, then the potatoes. Pour over the stock and season generously, bring to the boil, then turn the heat down to a simmer. Cook covered for 1 hr 30 mins or until the vegetables have softened and the potatoes have broken down completely. If you're using corned beef, add this to the pan 20 mins before the end of cooking. Serve with oatcakes, or crusty bread

This is my mom's recipe. My family really loves this sausage. My family thinks it tastes like sausage you buy at the fairs. I even sometimes add banana pepper rings with a couple tablespoons of the juice. Use what peppers you have on hand I've even used just red and green.

1/2 half red pepper
1/2 half green pepper
1/2 half yellow pepper
1 -2 onion, sliced

1/2 cup water

Steps:

  • Heat oven to 350°F.
  • Place sausage in a cake pan sprayed with Pam.
  • Top sausage with peppers and onions. Season with salt & pepper to taste. Add 1/2 cup water to the pan.
  • Cover the dish with foil and bake for 25 minutes.
  • Remove the foil and stir the sausage, peppers and onions. Cover with the foil again and return to the oven and continue to bake for 20 more minutes.
  • Note: I like to drain my peppers, onions and sausage if needed and fry my peppers & onions in butter a little before serving.
