BAKED SALMON WITH HERBED MAYO
This is the only way we fix salmon now! Easy to make for company and they will love it! The mayo keeps it very moist. I have experimented with different herbs, such as basil, oregano and have even added a few shakes of parmesan cheese!

Steps:
- 1. Mix together mayo and dill. If using fresh dill you only need 1 tablespoon. Add salt and pepper to taste.
- 2. Place salmon, skin side down, into a baking pan sprayed with oil or rubbed with olive oil or butter. (I keep the skin on to help keep it from sticking to the pan.)
- 3. Season lightly with seasoned salt and pepper then generously spread mayo mixture all over the top of the fish. Make it to the thickness you prefer. I had about 1/4 in or so.
- 4. Bake uncovered in a 450 degree oven until fish is almost done (mine took 15-20 min for fillets which seemed a bit long, but they weren't done.)
- 5. Then broil until lightly golden.

BAKED SALMON WITH HERBED MAYONNAISE
I had baked salmon at a friend's house recently. (She is an Alaskan native and had some salmon she brought back from vacation. Yummy) She spread mayo and some seasonings on the fish then baked it. I had never heard of that before, but it was really good. I came up with my own twist using that idea. I made this last night and it was wonderful. Hope you enjoy!

Tips:
- For the freshest salmon, choose wild-caught over farmed.
- If you're using frozen salmon, thaw it overnight in the refrigerator or under cold running water.
- To prevent the salmon from drying out, cook it at a high temperature for a short period of time. Aim for an internal temperature of 145 degrees Fahrenheit.
