LEGAL SEAFOOD STYLE BAKED SCALLOPS

Legal Seafood Style Baked Scallops image

Whenever we get back to the Boston area, it's a priority to to have a meal at Legal Seafoods. I recently "re-discovered" this recipe buried in old newspaper clippings. I had tried to recreate it in the past but now know I was missing the most important ingredient - buttermilk. I made it again after posting the recipe so I have edited the original description. It's even better than I remembered, you might want to try just a dash (or more) of cayenne pepper. It's delightful !

Tips:

  • Use a cooking thermometer to ensure the scallops are cooked to perfection. The internal temperature of the scallops should reach 145°F (63°C) for medium-rare, 150°F (66°C) for medium, and 155°F (68°C) for well-done.
  • Sear the scallops in a very hot skillet. This will create a nice crust on the outside of the scallops while keeping the inside tender and juicy.
  • Be careful not to overcook the scallops. Overcooked scallops will become tough and rubbery.
  • Serve the scallops immediately. They are best enjoyed when they are hot and fresh out of the oven.
  • You can use any type of cheese that you like in this recipe. Some good options include Parmesan, cheddar, Gruyère, and mozzarella.
  • You can also add other ingredients to this recipe, such as cooked bacon, shrimp, or crab.

Conclusion:

Baked Ritzy Scallops are a delicious and elegant dish that is perfect for a special occasion. They are easy to make and can be tailored to your own taste preferences.
