4 tablespoons olive oil
1 whole (3-pound) red snapper, cleaned, scaled
Salt and freshly ground black pepper
1 lemon, halved
1/2 small onion, chopped
1/2 small fennel bulb, chopped
2 sprigs fresh rosemary
1 tablespoon chopped fennel fronds
1 teaspoon chopped fresh rosemary leaves
1 small garlic clove, minced

Steps:

RED SNAPPER WITH GARLIC-LEMON-DILL BUTTER

Red Snapper with Garlic-Lemon-Dill Butter image

Robust ocean fish seeks tangy, buttery garnish for epicurean adventure. This garnish works well on most types of fish, but it was hatched using red snapper because I had a lemon and a single sprig of dill that needed to be used and the red snapper was the best looking fresh fish in the case. I've done Alaskan sockeye salmon the same way to good effect. Pairs well with pasta or rice, shown with my go-to Fettuccine with Sweet Pepper-Cayenne Sauce from this site, and fresh vegetables.

ROASTED RED SNAPPER WITH OLIVES

Roasted Red Snapper with Olives image

Categories     Olive     Roast     Low Cal     Snapper     White Wine     Winter     Thyme     Gourmet

Yield Serves 12

Number Of Ingredients 9

For sauce
1/3 cup dry white wine
3 garlic cloves, sliced thin
1/4 cup fresh lemon juice
1/3 cup extra-virgin olive oil
1 1/2 tablespoons chopped fresh thyme leaves
1 1/2 cups mixed green and black brine-cured olives (preferably unpitted)
six 6- to 7-ounce red snapper fillets with skin
6 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 425°F.
  • Make sauce:
  • In a small skillet boil wine with garlic until reduced to about 2 tablespoons. Add remaining sauce ingredients and salt and pepper to taste and bring to a simmer. Sauce may be made 1 day ahead and chilled, covered. Reheat sauce to warm before proceeding.
  • Pat snapper fillets dry and season with salt and pepper. Divide oil between 2 shallow baking pans large enough to hold fillets in one layer without touching and spread oil evenly. Heat baking pans in upper and lower thirds of oven 7 minutes. Working quickly, put fillets, skin sides down, in hot baking pans and roast in upper and lower thirds of oven 7 to 10 minutes, or until fish is just cooked through.
  • Transfer fillets with a metal spatula to a large platter, turning them skin sides up, and top with sauce.

Tips for Perfect Baked Red Snapper:

  • Select the Freshest Fish: Opt for wild-caught red snapper with bright red eyes and firm flesh. Avoid fish with a slimy or dull appearance.
  • Properly Clean and Gut the Fish: Remove the scales, gills, and entrails. Rinse the fish thoroughly inside and out to remove any impurities.
  • Score the Fish: Make shallow diagonal cuts on both sides of the fish to allow the marinade to penetrate and ensure even cooking.
  • Create a Flavorful Marinade: Combine olive oil, lemon juice, garlic, herbs, and spices to create a marinade that will infuse the fish with flavor. Marinate the fish for at least 30 minutes, or up to overnight.
  • Stuff the Fish: Fill the fish's cavity with aromatic ingredients like fennel, olives, and lemon slices to enhance its flavor.
  • Roast at High Temperature: Preheat your oven to a high temperature (around 400°F) to quickly sear and lock in the fish's juices.
  • Baste the Fish: During baking, baste the fish with the marinade or melted butter to keep it moist and prevent dryness.
  • Monitor Cooking Time: The cooking time will vary depending on the size of the fish. A general rule is to bake for 10-12 minutes per inch of thickness, or until the internal temperature reaches 145°F.
  • Garnish and Serve: Garnish the baked red snapper with fresh herbs, lemon wedges, or roasted vegetables before serving. Accompany it with your favorite sides like rice, roasted potatoes, or a refreshing salad.
