RIB-EYE STEAK AND POTATOES FOR TWO

Rib-Eye Steak and Potatoes for Two image

For a special occasion with a sweetheart, sharing a simple, luxurious dinner at home is even better than going to a restaurant. Splurge on a cut like rib-eye or tenderloin and open a great bottle of wine. It's a simple, no-fuss endeavor, yet very special.

Time 1h

Yield 2 servings

Number Of Ingredients 9

1 large boneless rib-eye steak, cut 2 inches thick (at least 1 1/2 pounds)
Salt and freshly ground black pepper
2 cloves garlic, sliced, plus 1 teaspoon minced garlic
1 rosemary sprig, roughly chopped
1 pound very small potatoes, rinsed
2 tablespoons butter
1/4 cup finely chopped parsley
Finely grated zest of 1 small lemon
Arugula or watercress, for serving (optional)

Steps:

  • Season steak generously with salt and pepper. Sprinkle with sliced garlic and rosemary and set aside to marinate, 20 to 30 minutes.
  • Heat oven to 450 degrees. Meanwhile, bring a pot of well-salted water to a boil. Add potatoes and cook at a brisk simmer until just done, 10 to 15 minutes. Drain and keep warm.
  • Heat a cast-iron or other heavy skillet over high heat. Remove and discard sliced garlic from steak. (If left on, it will burn in the skillet.)
  • When pan is hot, put in the steak and let brown well on one side, 4 to 5 minutes. Wait until steak forms a crust and comes away cleanly from the bottom to move it.
  • Flip steak and transfer pan to oven, uncovered. Roast until juices begin to rise on surface of steak (you will see the droplets) and internal temperature is 120 degrees, 8 to 10 minutes. Remove steak from pan and let rest, tented with foil, for 5 to 10 minutes. (Residual heat will continue to cook the meat to medium-rare as it rests.) Warm a serving bowl for the potatoes and plates for the steak.
  • Melt butter in a wide skillet over medium-high heat. Add potatoes and toss to coat and heat through. Sprinkle with salt and pepper. Add minced garlic and cook, stirring, until softened but not browned, 1 minute or less. Gently stir in parsley and lemon zest and transfer to serving bowl.
  • Cutting on a slight diagonal, slice steak into 1/2-inch slices, then transfer to plates. If using, place a handful of greens next to the steak. Serve immediately, passing potatoes at the table.

BAKED POTATOES WITH RIB-EYE STEAK HASH

Baked Potatoes With Rib-Eye Steak Hash image

This is a classic hash recipe turned inside out, just fill the potato! I think oregano or marjoram could also be used in place of the thyme. I also use gloves when handling any chile peppers, don't wanna touch your eye after dealing with peppers! Adapted from Bon Appetit magazine, March 2005.

PRIME RIB HASH

Prime Rib Hash image

This dish is a midwinter night's dream come true. It looks like a thick pancake of hash browns, crusty on the outside, almost pudding-like inside, using potatoes both diced and mashed. Though it is liberally studded with perfect bits of prime rib, it is unabashedly potato-based, unlike other steakhouse variations, which go heavier on the meat.

Time 25m

Yield 2 servings

Number Of Ingredients 14

1 1/4 cups diced Idaho potato
Kosher salt
1 1/2 tablespoons butter
1 cup diced white onion
1/2 cup diced celery
Freshly ground black pepper
1/2 teaspoon finely chopped fresh rosemary
1/2 teaspoon finely chopped fresh parsley
10 ounces cooked prime rib or other leftover meat (short ribs, flank steak, fillet, pork roast, roasted chicken or turkey), cut into 1/2-inch to 3/4-inch dice
1/4 cup ketchup
1/4 teaspoon Tabasco
1 tablespoon vegetable oil, or as needed
2 large eggs
1 teaspoon finely sliced chives

Steps:

  • Preheat oven to 450 degrees. Place diced potato and a pinch of salt in a small saucepan. Cover with water, place over medium heat, and simmer until just tender. Drain and rinse under cold water; set aside.
  • Meanwhile, melt butter in a sauté pan over medium heat. Add onion, celery, and salt and pepper to taste. Sauté until tender. Add rosemary and parsley, remove from heat, and set aside.
  • Place diced potatoes in a large bowl; roughly mash about half the potatoes with a fork or back of a spoon. (If you have leftover mashed potatoes available, you could use 1/4 cup here and reduce diced potatoes to 1 cup.) Add onion mixture, meat, ketchup and Tabasco.
  • Place an 8-inch nonstick sauté pan over medium heat. Coat bottom with 1 tablespoon oil and add meat mixture, patting top and edges to make a compact patty. Allow to cook until browned underneath, 1 to 2 minutes, then transfer pan to oven to cook for an additional 10 to 15 minutes. Meanwhile, place another small skillet over medium heat. Fry or poach eggs as desired; remove from heat and keep warm.
  • To serve, invert hash onto a warmed serving platter. Top with fried or poached eggs, and garnish with chives. Serve immediately.

BAKED POTATOES WITH RIB-EYE STEAK HASH

Baked Potatoes with Rib-Eye Steak Hash image

I love to make this with leftover steak and can't wait to try this version. From Bon Appetit, March 2005.

Time 1h45m

Number Of Ingredients 12

4 large russet potatoes (each about 10 ounces)
olive oil
coarse kosher salt
10 oz rib-eye steak, trimmed
2 Tbsp olive oil
2 bell peppers (preferably 1 red and 1 orange), cut into 1/4-inch wide strips
1 large onion, halved, thinly sliced
2 red jalapeno chiles, halved, seeded, very thinly sliced crosswise
1 c heavy whipping cream
2 tsp fresh marjoram, chopped
4 tsp butter
fresh marjoram sprigs, optional

Steps:

  • 1. Preheat oven to 400°F. Rub potatoes with olive oil; sprinkle with coarse salt. Place on baking sheet. Pierce with fork. Bake until tender, about 1 hour.
  • 2. Sprinkle steak with salt and pepper. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add steak and sear until brown but still very rare, about 2 minutes per side. Transfer steak to plate. Reduce heat to medium. Add bell peppers, onion, and jalapeños to skillet. Sauté until peppers are soft and onion caramelizes, about 30 minutes.

  • 4. Cut cross in potatoes and press on sides to open slightly. Add salt, pepper, and 1 teaspoon butter to each and mash slightly with fork. Top each with steak mixture. Garnish with marjoram.

Tips:

  • To save time, use pre-cooked steak or leftover steak from a previous meal.
  • If you don't have steak hash seasoning, you can make your own by combining garlic powder, onion powder, paprika, salt, and pepper.
  • To make the potatoes crispy, be sure to toss them in olive oil and salt before baking.
  • If you like your potatoes extra crispy, bake them for an additional 5-10 minutes.
  • For a more flavorful steak hash, use a variety of vegetables, such as bell peppers, onions, and mushrooms.
  • To make the steak hash ahead of time, cook it according to the recipe and then let it cool completely. Store the steak hash in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the steak hash in a skillet over medium heat until warmed through.

Conclusion:

Baked potatoes with rib-eye steak hash is a delicious and satisfying meal that is perfect for any occasion. The potatoes are crispy on the outside and fluffy on the inside, while the steak hash is flavorful and packed with protein. This dish is sure to please everyone at your table.
